Salsa Chicken Baked Flautas

Baked Flautas are made with flour tortillas, baked until crispy in the oven, and filled with a 4 ingredient salsa chicken mixture! This is a quick & easy dinner recipe that can be on the table in less than 30 minutes. Serve with dipping sauces like salsa, guacamole, and nacho cheese sauce for a dinner that the entire family will love.

Ingredients

  • 2 cups cooked chicken shredded or chopped
  • 1 cup salsa
  • 1 cup shredded cheese any variety
  • 8 small flour tortillas (6-inch soft taco size)

Instructions

  • Preheat the oven to 400° F. Line a cookie sheet (18" x 13") with parchment paper.
    * I think the parchment paper gets the flautas crispier so I recommend that. You can also spray it lightly with cooking spray or line with tin foil, or use a silat baking liner.
  • In a mixing bowl, stir together the chicken, salsa, and cheese until combined well.
  • Warm the flour tortillas in the microwave for about 20-30 seconds. The flautas are much easier to roll tightly when they are soft & warm.
  • Place about 3 tablespoons of salsa chicken mixture onto a tortilla and roll it up tightly. Place it seam side down on the prepared baking sheet, repeat with remaining tortillas.
  • Spray the tops with cooking spray.
  • Bake for 15 minutes or until they are golden brown and crispy.
  • Serve with your choice of dip(s).
    * Options include sour cream, guacamole, nacho cheese sauce/queso (store-bought, canned, or homemade), pico de gallo, salsa, etc.

Notes

Flour Tortillas : Make sure to warm them up which will make it easier to roll them, without them tearing, and it's easier to roll them tightly when they are warm & soft. You can use any size of flour tortilla you want but I recommend using the small soft taco size tortillas that are about 6-inches. 
Chicken : Make sure it's cooked! Use a rotisserie chicken, leftover chicken from the fridge or freezer, or even canned chicken. You can also put 2 small chicken breasts + a can of chicken broth into the slow cooker and cook on LOW for 6-7 hours. By the time dinner comes around the chicken will be ready to shred with two forks. Make the flautas as directed. Feel free to also use any other protein like ground beef or ground turkey. You'll want to make sure it's seasoned before like with taco seasoning. You can even use leftover taco meat in this recipe. 
Adaptable Recipe : Make it spicy by using hot salsa, pepper jack cheese, or add some chili powder/red cayenne pepper. Add any dried seasonings you want to the chicken mixture like chili powder, cumin, or garlic powder. Add a can of refried beans to the chicken for a heartier and creamier Flauta. Or try adding some rinsed and well drained canned beans. If you add stuff to the salsa chicken mixture, just remember that you will get more than 8 flautas so plan accordingly when you buy the flour tortillas because you will need more than 8.
