Simple Peach Cobbler

This Simple Peach Cobbler is made with juicy chunks of fresh sweet peaches, topped with melted butter, and an easy homemade cobbler biscuit mix with only 5 ingredients! It bakes up with warm peaches and a sweet biscuit cobbler topping. Perfect dessert served with a scoop of vanilla ice cream.

Ingredients

  • 8 tablespoons (1 stick) salted butter melted
  • cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup whole milk
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 2 cups diced peaches (preferably fresh peaches)

Instructions

  • Preheat the oven to 350° F. Prepare a 8x8-inch baking dish and spray it with cooking spray.
  • Pour the melted butter into the prepared dish. Set aside for later.
  • In a medium mixing bowl, add the flour, sugar, whole milk, baking powder, and vanilla extract. Mix with a whisk or wooden spoon until combined well and smooth. Pour this over the melted butter inside the baking dish.
    * As you pour the batter on top of the butter, the butter might come up the sides and onto the top of the batter, and that's ok.
  • Gently drop the diced peaches on top of the cobbler batter.
  • Bake for 35-45 minutes or until the top is golden brown and it's cooked through.
    * Insert a toothpick into the middle of the cobbler topping to make sure it's cooked, and does not come out with wet batter.
  • Serve a scoop of peach cobbler topped with vanilla ice cream or freshly whipped cream. You can also add some chopped pecans or walnuts if wanted.

Notes

Peaches : For best taste use fresh peaches. Canned peaches can be used if needed. Make sure the peaches are ripe before using. When a peach is ripe, the skin will easily peel right off with fingers or a knife. If you are having trouble peeling the skin off, place the peaches in boiling water for about 2 minutes. Let them cool slightly and then the skin will pull right off. 
You will need about 3 peaches for this recipe. I usually add more than 2 cups of peaches, like 2 1/2 cups...
