Christmas is not complete without watching the movie Elf with this Buddy The Elf Christmas Snack Mix! Rice Chex, bugles, kettle corn, crispy chow mien noodles, marshmallows, sprinkles, and peanut m&m's make up this addicting white chocolate covered snack mix that you just can't stop eating. Just like the famous movie this Christmas snack mix is sure to be a hit with your family and friends!
Stir together the rice Chex, Bugles, and kettle corn inside a mixing bowl until combined.
Add the white chocolate chips to a microwave-safe bowl (I use a glass measuring cup) and melt in 30 second increments stirring it well after each round. * Once it's melted and mixed together smoothly, it's ready. Don't cook for too long or else the chocolate could seize or scorch. * It should only take 1-2 minutes to melt the white chocolate properly.
Pour the white chocolate over the Chex mix inside the bowl and stir to coat everything in the melted chocolate.
Spread the mixture out onto a cookie sheet that has been lined with wax paper or parchment paper. Use a rubber spatula (that has been sprayed with cooking spray) to spread it out evenly. Allow it to set and dry at room temperature for 1 hour OR you can refrigerate it for 30 minutes.
Break it apart and add it into a large mixing bowl. Add the powdered sugar and stir until everything is coated in it.
Add in the chow mien noodles, mini marshmallows, peanut m&m's, and sprinkles. Gently stir to combine.
Serve this snack mix inside a bowl, or individual treat bags, and enjoy! * The sprinkles and candy will fall to the bottom so I like to add some additional sprinkles and m&m's on top of the snack mix for a pretty presentation before serving.

Tips For Success
Pro Tip : When you are spreading the white chocolate Chex mix ontothe cookie sheet, spray a rubber silicone spatula with cooking spray to help spread it and to prevent it from sticking to the spatula. You can also use wax paper as a barrier between your hands and the snack mix when you're spreading it out.
Serving Tip : Add additional sprinkles and candies to the top of the snack mix after you have put in the serving bowl. As you mix up the snack mix in the bowl the candies and sprinkles will fall to the bottom. So be sure and add some more on top for a pretty presentation.
Large Bowl : Make sure you are using a large bowl to mix up this snack mix. You will need to mix it well so make sure the bowl is large enough to accommodate the ingredients and all the mixing.
Good Quality White Chocolate Chips : I recommend using Ghirardelli brand or Guittard brand. The store brand and Nestle brand taste more like vanilla melting wafers instead of real white chocolate.
Serving Tips
This Christmas snack mix makes for the best friends & neighbor gifts for the Holidays. Put some of the mix inside Christmas treat bags and tie some wrapping ribbon around the top.
You can also put the snack mix inside holiday tins with a bow on top.
If serving at a party, serve the snack mix inside a festive holiday serving bowl. I have linked some really great options that I use down below in the recipe card (aff. link).
Can I Make Substitutions
Popcorn : The kettle corn adds a layer of sweetness and crunch but you can use any popcorn you love. Regular classic popcorn works well.
M&M's : Although the crunch and salt from the peanut m&m's is preferred, you can use any variety of m&m's that you want. Plain, peanut, almond, peanut butter, caramel, etc.
Sprinkles : Use any holiday themed sprinkles you want in this snack mix.
Vanilla Almond Bark : If you prefer almond bark or melting wafers then use those in place of the white chocolate chips. Melting wafers and almond bark or much easier to work with, so if white chocolate seizing up scares you then make it simple and use melting wafers or almond bark. In the white color or vanilla flavored.
How To Store Snack Mix
Store this snack mix in an airtight container (like Tupperware or Ziploc gallon-sized bag) to ensure the freshness of it. Leftovers keep well, if stored properly, for up to 4-5 days.
I think this snack mix tastes best the day it's made. If serving for a party I would not recommend making it more than 24 hours in advance.
