Strawberry Cake Mix Cookies only need 5 ingredients! Soft-baked strawberry cookies, that start with a cake mix, are rolled in powdered sugar and then baked. They get perfect sweet crinkly tops while they bake in the oven.

Ingredients

  • 1 box (15.25 oz) strawberry cake mix
  • ½ teaspoon baking powder
  • 2 large eggs
  • 1/3 cup vegetable or canola oil
  • 1/2 cup powdered sugar

Instructions

  • Preheat the oven to 375° F. Prepare a cookie sheet by lining with parchment paper, silpat liner, or spray with cooking spray. Set aside.
  • In a small bowl add the dry strawberry cake mix and baking powder. Stir with a wire whisk to combine.

  • In a separate larger mixing bowl, use a hand mixer to blend the eggs and oil until well combined.
  • Add the dry ingredients into the wet ingredients and mix with a hand mixer until everything is combined.

  • Use a small cookie scoop (1 tablespoon size) to scoop out the cookie dough and roll the dough into a ball with your clean hands.
    Place the powdered sugar into a small bowl and roll each cookie dough ball in the powdered sugar, making sure that it is coated well.

  • Place 12-15 cookies on the cookie sheet. Make sure they are at least 2-inches apart from each other.
  • Bake for 8-10 minutes. The tops should have cracks and the edges should still be pale or lightly golden brown.
    Allow the cookies to rest and set on the warm cookie sheet for about 5 minutes. Remove them to a cooling rack to cool completely.

Notes

Recipe Tips -
  • Use a Cookie Scoop : Scooping even sized cookie dough balls is so much easier when you use a cookie scoop. For this recipe you can use any size you want, but the recipe has been tested, and the nutrition information is for 1 tablespoon of cookie dough per cookie. 
  • Powdered Sugar Tip : It's important to make sure the entire cookie dough ball is coated really well in the powdered sugar before baking. If there is not enough of it, the sugar will just absorb into the cookie during the bake time. If wanted, when the cookies come out of the oven and they're warm still, sprinkle on some more powdered sugar. 
  • Parchment Paper : I say this every time I share a cookie recipe. Use parchment paper! I love the pre-cut parchment paper sheets because they help cookies cook more evenly, they make clean-up a breeze (you usually don't even have to wash the cookie sheet), and they help prevent the bottoms of cookies from over browning.

    • Leftovers store well at room temperature, in an airtight container, for up to 5 days. 
  • Can I Freeze Strawberry Cake Mix Cookies?

    • You can place the room temperature cookies into an airtight container, or freezer safe bag, and freeze for up to 3 months. 
    • Allow the cookies to thaw (at room temperature) before eating. 
    • If I am freezing individual cookies I like to wrap each cookie in foil and then place all the foil wrapped cookies into a gallon-size Ziploc bag and put it in the freezer. That way, when I want 1 cookie, I just have to grab one foil wrapped cookie instead of taking the entire bag out of the freezer and getting one.
  • Variation & Substitution Ideas

    • White Chocolate Chips : Add about 1 cup white chocolate chips into the cookie batter. 
    • Milk Chocolate Chips : Add milk chocolate chips for a delicious twist to 'chocolate dipped strawberries'.
    • Cake Mix : Technically, this recipe can be made with any variety/flavor of cake mix that you want. So get creative and try this same recipe using a chocolate cake mix, lemon cake mix, vanilla cake mix, etc. Lots of choice of cake mix flavors and tons of add-in ideas.
