Bunny Bark

Easter Bunny Bark is a cute & festive Easter treat made with white chocolate, swirls of pink candy melts, and lots of colorful sprinkles and candies.

Ingredients

  • 2 bags (11 oz each) white chocolate chips
  • 3 ounces bright pink candy melts (about 1/3 cup candy melts)
  • mini cadbury eggs
  • jelly beans
  • assorted pastel/Easter sprinkles

Instructions

Prep for Bunny Bark

  • Prepare a shallow 9x13 pan by lining with parchment paper. Make sure to have some overhang so you can easily lift the bark out once it's set.
    *The 9x13 pan is not a cake pan with the higher sides on it. This is a 9x13 pan with 1" sides on it (or less). You can use any pan you want (like a cookie sheet with the shorter sides on it) and then just make sure that you only spread the melted white chocolate on the parchment paper only.
  • Dump the white chocolate chips into a microwave-safe bowl (I use a glass mixing bowl). Melt in 30 second increments, at 50% power, stirring after each, until the white chocolate has fully melted and is smooth with no clumps.
    * It will take 2-3 minutes, of 30 second increments, in order to melt the white chocolate properly.
    *It's important to melt white chocolate at a low temperature (50% power) and slowly (30 second increments) to avoid it from seizing up.

  • Cover the melted white chocolate with plastic wrap or another piece of parchment paper, and set aside for just a moment.
  • Immediately melt the bright pink candy melts in a separate microwave-safe bowl, in 15 second increments, until melted and smooth.
    * No need to microwave the candy melts at 50% power. That is only for the white chocolate as it's more sensitive to the higher heat when melting.

  • Transfer the melted pink candy melts into a piping bag or a Ziploc bag (don't cut the corner yet).

Make the Bunny Bark

  • Use an icing spatula to evenly spread the melted white chocolate over the parchment paper on the cookie sheet.

  • Next, cut a tiny hole in the piping bag or corner of the Ziploc bag. Pipe the pink lines back and forth and across the white chocolate. Once lines are drawn, take a toothpick across and through the pink lines to create a marbling effect.

  • Sprinkle the assorted sprinkles over top the bark. Randomly place the Cadbury eggs and jelly beans all over.

  • Place the bunny bark into the refrigerator and allow it to set for 30-40 minutes or until the bark is set.
    Once set, break the white chocolate bunny bark into pieces and serve!

Notes

Recipe Tips -
  • Melting White Chocolate : It's important to follow the directions exactly (given in the recipe below) for melting the white chocolate chips. White chocolate is very sensitive when melting, which is why you want to do it low & slow, to avoid it from seizing up. 
  • Quality White Chocolate Chips : I highly recommend using a name-brand, quality white chocolate chips for this recipe. I love the Guittard brand or Ghiradelli brand. 
  • Pan Size : You can use any shaped or sized pan you want. Just make sure that you only spread the melted white chocolate onto the parchment paper and not anywhere else. I typically like to use a cookie sheet or other shallow pan, because it's easier to move the icing spatula around to spread it out evenly. Using the 9x13 sized pan will give you a thick bark, that is not too thick and not too thin, so that is what I use. A 10x15 baking pan is also a great option. I have liked the pan down below in the recipe card that I use. Again, just make sure that you keep the bunny bark on the parchment paper. The size of the pan also depends on how thick or thin you want the bunny bark, and also how thin you spread it or if you chose to keep it thicker. 
Recipe FAQ's -
  • How to Store Bunny Bark
    • It's best to store bark in the refrigerator, in an airtight container, for up to 3 weeks. 
    • The bunny bark will soften as it sit at room temperature, which makes it perfect for eating and serving at a gathering, but not so great for storing it. 
  • Can I Make Substitutions?
    • Candy Melts : There are so many bright and fun color of candy melts. Use any of them! Yellow, purple, aqua, green, they all would look great in this bunny bark.
    • Candy : Any small candies can be used. Try using some pastel easter M&M's, or some chopped Reese's peanut butter cups, or choose any jelly bean variety you love. 
    • Sprinkles : I recommend using at least 2 different sprinkles for this bark. Any sprinkles can be used. Nothing is off limits. 
    • White Melting Wafers/Almond Bark : Instead of the white chocolate chips you can use some Ghiradelli brand white chocolate melting wafers OR vanilla flavored almond bark. They are not as sensitive when microwaving which makes it easier for most people to deal with.
