Easy Ranch Pork Loin Recipe

This Easy Ranch Pork Loin is such an easy family dinner idea with only a few ingredients and the crockpot does all the work! It's a meal-in-one with seasoned pork loin, carrots, and potatoes smothered in a buttery ranch sauce.

Ingredients

  • 3 lb boneless pork loin
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 24 ounces baby potatoes (halved)
  • pounds carrots (peeled, cut into 1-inch pieces)
  • 1 packet ranch seasoning mix
  • 4 tablespoons butter (sliced)

Instructions

  • Spray the insert of a crockpot with cooking spray.
  • Pat the pork loin dry with some paper towels. Season all over the pork with salt and pepper.

  • Add the olive oil to a sauté pan, over medium-high heat, add the seasoned pork loin to the hot pan and sear all sides until golden brown. Transfer the pork to the crockpot.

  • Add the potatoes and carrots to your crockpot around the pork loin.
    24 ounces baby potatoes, 1½ pounds carrots

  • Sprinkle the ranch seasoning mix all over the pork and vegetables. Top the pork with the slices of butter.

  • Cover with the lid and cook on LOW heat for 6-8 hours.
  • Serve immediately. Remove the pork from the crockpot and slice it. Serve with some potatoes, carrots, and crockpot drippings if wanted.

Notes

Baby Potatoes - You will find these at the grocery store by the potatoes. They come in a small net bag that is 1.5 pounds or 24 ounces. One bag is what you will need. They are also labeled as 'gemstone potatoes'. If using regular potatoes, buy 1.5 pounds of red potatoes or Yukon gold potatoes, peel them, and chop them into 1-inch pieces. 
Recipe Tips -
  • Don't Skip The Sear : Searing the pork loin locks in all the flavor and keeps it juicy. It also provides a nice contrast with the crisp exterior to the soft & tender pork inside. If you are really short on time then yes this step can be skipped, but for the best taste and results take the time to sear the pork. Searing also helps the pork loin keep its shape while cooking in the crockpot for the longer cook time.
  • Cook Time : This may seem long, especially for pork, but cooking the pork in the crockpot yields this ultra tender and fall-apart pork. It's my favorite way to cook pork! If you just prefer it cooked to temperature then take it out once it reaches the appropriate temperature (145 degrees F). You may have to cut the potatoes and carrots into smaller pieces, if doing this, so that they will cook correctly in the shorter cook time. 
  • Pork Loin vs Pork Tenderloin : These sound similar but are very different and are not interchangeable in this recipe. Pork loin is wider and fatter and usually has more fat on it. While pork tenderloin is smaller, thinner, more narrow in size and has no visible fat on it. They're both learn cuts of meat but still very different. Make sure you are buying pork loin and that it's labeled as such.
