Instructions
Prepare your crock pot by spraying the insert with cooking spray.
Thinly slice the steak against the grain. * I recommend putting the steak into the freezer for 30 minutes prior to slicing. This makes it much easer to slice. * See notes for how to slice against the grain.
1½ pounds chuck steak
Add the steak slices, beef broth, soy sauce, brown sugar, and garlic into the crock pot. Stir to combine.
1 cup beef broth, 1/2 cup soy sauce, 1/4 cup packed light brown sugar, 4 cloves garlic
Cover with the lid and cook on LOW heat for 5-6 hours.
When done, whisk together the cornstarch, water, and sriracha (if using) in a small bowl. Pour it into the crock pot and stir. Add in the broccoli pieces.
1/4 cup cornstarch, 1/4 cup water, 1/2 teaspoon sriracha, 1 head broccoli
Cover the crock pot with the lid and cook on HIGH heat for 30 minutes.
Serve over cooked white rice, a drizzle of the extra sauce, and a garnish of sesame seeds.
Notes
Garlic : Use fresh garlic that has been minced or pressed, chopped garlic from a jar, or garlic paste from a tube.Don't Use All Reduced-Sodium Products : Because there is no added salt in the recipe, it's important that you incorporate the salt and flavor through the other ingredients. I would recommend using regular, full salted beef broth and then either reduced-sodium soy sauce or regular soy sauce. It just depends on your salt preference. Remember that the slow cooker tends to mute flavors because of the longer cook time, so it's important to not use all low-sodium products. Freeze Steak : To make it easier to thinly slice the steak, put it in the freezer for 30 minutes to allow it time to firm up and chill. This makes it much easier to cleanly cut the steak into thin strips. Cut Against The Grain : When a recipe calls for the steak to be 'cut against the grain' it's referring to the direction that the muscle fibers run within the piece of meat. Cutting against the grain means to cut through the fibers and make them shorter. This will make the meat more tender and easier to chew. Steak Tip : There are several other options of steak that you can use for this recipe. Chuck steak, sirloin steak, flank steak, or skirt steak. I like to first trim off any fat pieces on the piece of meat, then freeze it, then cut it into thin slices against the grain. Sesame Oil : Adding this really brings a whole other level of flavor to the dish. If you have some in your pantry then I definitely recommend using it. I add about 1-2 teaspoons of sesame oil in with the soy sauce and other ingredients.
