These Chocolate Covered Blueberry Clusters are the perfect snack for that sweet tooth! It's a variation of the popular viral recipe made with protein-packed greek yogurt, fresh blueberries, dipped in chocolate and then the finishing touch is a sprinkle of sea salt.
Line a large baking sheet, like a cookie sheet, with parchment paper (or wax paper) and set it to the side.
In a medium bowl, stir together the blueberries and plain greek yogurt until well combined. Drop spoonfuls of the creamy yogurt fruit mixture onto the parchment-lined baking sheet. You can use a large spoon to do this or an ice cream scoop.
2 cups fresh blueberries, 1 cup plain or vanilla greek yogurt
Place the baking sheet into the freezer for 1 hour.
Melt the chocolate and coconut oil, inside a microwave-safe bowl, in 30-second increments until it's completely melted, smooth, and shiny. Make sure to stir it well after each 30-second cook time. Don't over cook it or else the chocolate will seize up.
1½ cups dark chocolate chips, 1 tablespoon coconut oil
Working one frozen cluster at a time, place it into the melted chocolate and use a fork or spoon to ensure that the entire clustered is covered in chocolate. Place the chocolate dipped cluster back onto the prepared baking sheet and allow them to set until the chocolate is hardened. This won't take long at all!* If using sea salt, sprinkle some on the cluster while the chocolate is still wet.
flaky sea salt
Store the blueberry clusters in the freezer at all times. They're best eaten frozen but can be left out at room temperature for a few minutes to soften slightly.
Notes
Dry Blueberries : It's important to rinse and remove excess moisture from the blueberries before adding them into the creamy yogurt. Place the blueberries into a colander and run cold water over it to rinse off any dirt. Lay the blueberries onto a double layer of paper towels, on the counter top or on a plate, and then use another paper towel to dab them dry.
Chocolate Chips : I use dark chocolate chips but you can use semi-sweet or milk chocolate chips. Nutrition facts are for plain greek yogurt + dark chocolate chips. You can also use a chocolate baking bar (from the baking aisle) and chop it up into smaller pieces prior to microwaving it. You will need about 3 bars (4 oz each) to equal the 1.5 cups needed.
Want A Touch of Sweetness? : Try adding some vanilla extract and (start with 1/4 teaspoon or 1/2 teaspoon) into the yogurt + blueberry mixture. You can also use vanilla greek yogurt or honey vanilla greek yogurt for some added sweetness to the yogurt mixture. You could also add a touch of maple syrup - It's best to use real raw maple syrup instead of pancake syrup.
Use Good Greek Yogurt : This is so important! Make sure you are using a greek yogurt flavor and brand that you love. I highly recommend using the Greek Gods brand of yogurt. It's thick, rich in flavor, and not as tangy and sour as most plain greek yogurts are.
Tip : Depending on how small your freezer is (or what room room you have) you may need to use a plate(s) or a small baking sheet. The recipe only makes 10 clusters and as long as they are about 1-inch apart, they can be put on anything.
