Crockpot Mississippi Meatballs

If you love traditional crockpot Mississippi Pot Roast then these easy Crockpot Mississippi Meatballs are going to be your new fave dinnertime hit. Simple to make with only 5 ingredients and one of those is frozen meatballs.

Equipment

Ingredients

  • 1 bag (26 oz) frozen meatballs (about 55-60 meatballs)
  • 1 jar (16 oz) mild pepperoncini peppers
  • 1 packet ranch seasoning mix
  • 1 packet brown gravy mix
  • 1/2 cup (1 stick) butter sliced thin

Instructions

  • Spray the insert of the crockpot with nonstick cooking spray. Dump in the frozen meatballs, pepperoncini peppers (juice & peppers, everything!), ranch seasoning packet, and brown gravy mix packet. Stir together as good as you can.

  • Lay the slices of butter over top.
    1/2 cup (1 stick) butter
  • Cover with the lid and cook on HIGH for 3-4 hours or on LOW heat for 6-7 hours.
  • Serve over mashed potatoes, rice, egg noodles, pasta, or vegetables.

Notes

Pepperoncini Peppers : Use a mild version for mild spice or medium for more spice in the recipe. Banana Peppers are another great substitute in the mild version. If you don't want the chunks of pepperoncini peppers in the final product, I recommend taking the stems off of each pepper and running the peppers and juice (from the jar) through a food processor or blender. It won't get it completely smooth, but it also won't have huge chunks of pepper in the final dish. I do this a lot because my kids won't eat it with the huge pepper chunks just sitting there. 
Thicken The Gravy : If you want the gravy thicker then there is a simple fix for that! Stir together 1 tablespoon cornstarch + 1/4 cup cold water until well combined. Stir this into the gravy inside the crockpot and let it cook on HIGH for about 10-15 minutes or until the gravy has thickened.
