Prosciutto Wrapped Asparagus

Prosciutto Wrapped Asparagus is a classic appetizer recipe that's perfect for holiday gatherings or as a side dish to dinner. Roasted asparagus spears are wrapped in thin slices of prosciutto with freshly grated parmesan cheese, and then baked in the oven until golden brown.

Ingredients

  • 1 bunch fresh asparagus
  • 2 tablespoons extra virgin olive oil (I use 'light tasting')
  • ¼ teaspoon sea salt (or kosher salt)
  • ¼ teaspoon black pepper
  • 8 ounces thinly sliced prosciutto
  • freshly shredded parmesan cheese (from a wedge of parmesan)

Instructions

  • Preheat the oven to 400℉. Prepare a baking sheet (a rimmed one with sides) and line it with parchment paper. 
    Prep : Trim the tough ends of the asparagus off, the woody ends of each asparagus spear. This will be about 2-inches of the bottom part of the spear. Rinse in cold water to wash them and then use paper towels to dab them dry.
  • In a mixing bowl, toss the trimmed asparagus, extra virgin olive oil, sea salt, and black pepper until the asparagus are well coated. Set the bowl aside for later.

  • Cut each slice of prosciutto in half, lengthwise, on a cutting board using a knife. Lay each slice of prosciutto flat on the cutting board. Add some shredded parmesan cheese over each slice of prosciutto.

  • Place a seasoned asparagus spear diagonally onto the bottom of a slice of prosciutto. Start from the bottom of the asparagus spear and roll up until the prosciutto is completely wrapped around the asparagus spear. Place it on the prepared baking sheet. Repeat with the remaining slices. 
  • Bake for 10-15 minutes or until the prosciutto becomes crispy and slightly browned and the asparagus is tender but still has a slight bite to it. 
  • Move the prosciutto wrapped asparagus to a serving platter and garnish with lemon wedges and/or a squeeze of fresh lemon juice (just before serving).

Notes

Asparagus Bunch : One bunch comes with about 20-22 asparagus spears. 
Prosciutto : You can find this near the fresh meat deli counter by the other speciality meats and cheeses. You need about 12 whole slices of prosciutto in the package - once cut in half, you will have enough to wrap around each asparagus spear.
Use A Parmesan Cheese Wedge : For the best flavor I highly recommend buying a wedge of parmesan cheese and shredding it yourself with either a box cheese grater (on the finer smaller side) or a handheld parmesan cheese grater. 
Cooking Tip : Keep an eye on the asparagus and prosciutto while it's in the oven, as cooking times may vary depending on the thickness of the asparagus and then brand of prosciutto you're using. It's important to avoid overcooking, as the prosciutto can become too dry and the asparagus too mushy if overcooked.
