Notes

Soy Sauce : Use full salted soy sauce or reduced-sodium soy sauce depending on dietary needs or preference. The longer cook time in the slow cooker tends to mute flavors over time so I use full salt soy sauce OR I Use half soy sauce + half reduced-sodium soy sauce. Lots of options here! If you use all reduced-sodium soy sauce I would recommend adding some extra dried seasonings to the pork (kosher salt, black pepper, garlic powder, etc).
Pork Chops : You will find thin pork chops and thick pork chops at the grocery store. Either one can be used it just depends on preference. The thick cut pork chops will hold up better to the longer cook time without losing their shape as in fall-apart tender (like what is pictured above in the post). However, thin-cut pork chops tend to get ultra soft and tender in the slow cooker because they are thinner.
