Slow Cooker Creamy Italian Chicken

Slow cooker creamy Italian chicken is an easy and creamy delicious dinner. It's a dump & go slow cooker meal that takes just minutes to prepare and then it's ready when you are. The chicken is fall apart tender and it makes the most amazing creamy Italian sauce. Serve over pasta or rice for a delicious dinner.

Ingredients

  • 4 boneless, skinless chicken breasts (about 2-3 lbs)
  • 1 can (10.75 oz) cream of chicken soup
  • 1 cup low-sodium chicken broth
  • 1 cup Italian salad dressing
  • 1 packet Italian seasoning dressing mix (DO NOT prepare)
  • 1 block (8 oz) cream cheese, cubed

Instructions

  1. Place chicken in the bottom of the slow cooker.
  2. In a mixing bowl, combine cream of chicken soup, chicken broth, Italian salad dressing, and Italian seasoning mix. Whisk together until combined. Pour over the chicken.
  3. Cover and cook on low for 6-8 hours.
  4. Take chicken out and shred with two forks. Return to slow cooker and add the cream cheese. Cover and let cook for an additional 30 minutes.

    ** Cut the cream cheese into small cubes, about 12 squares. This will help it melt easier in the slow cooker **

  5. Mix together and serve over pasta, rice, or egg noodles. Garnish with chopped parsely and shredded parmesan cheese if wanted. 

Recipe Notes

DO NOT prepare the Italian seasoning mix packet. Add the dry seasoning straight from the packet. 

 

This also keeps well on the 'warm' setting if needed, after it's had the cook time.

 

If you will be gone all day, go ahead and add the cubed cream cheese into the slow cooker at the beginning (with the sauce and chicken). I have done it this way and it turns out just fine. When you get home, shred the chicken and mix it all together.
