2tablespoonsgranulated sugar
1tablespoonactive dry yeastNOT quick rise yeast
1½cupshot water
3 - 3½cupsall-purpose flour
1teaspoonsalt
4tablespoons salted buttermelted
2cloves garlic
Breadstick Topping
4tablespoonssalted buttermelted
1tablespoongrated parmesan cheese
½teaspoonItalian seasoning
Instructions
Add sugar and yeast to the bowl of a stand mixer. Pour the hot water over it and use a whisk to stir it together. Let it sit for 5 minutes. * Mixture should be very puffy and frothy looking on top after the 5 minutes.
Add 3 cups of flour and the salt to the yeast mixture. Use the dough hook to mix it together. The dough should pull away from the sides of the bowl and form a slightly tacky ball. If needed, use the additional 1/2 cup flour as needed.
Cover the bowl with a towel and let raise for 10 minutes.
Spray countertop with cooking spray to prevent sticking. Use a rolling pin to roll the dough into a 12"x18" rectangle. The size of the cookie sheet.
Combine melted butter and garlic into a small bowl and brush it evenly over the dough.
Fold the dough in half. Use a pizza cutter to cut 1-inch strips. Twist each strip and place it on the cookie sheet.
Let the breadsticks rest for 15 minutes.
Heat the oven to 400° while the breadsticks are resting.
Cook for 13-18 minutes.
Combine the melted butter, parmesan cheese, and Italian seasoning. Brush it over the warm cooked breadsticks. Serve!
Notes
Hot Water : You want the water hot enough so that it activates the yeast. I turn the tap to all the way hot and then measure out the 1 1/2 cups needed for the recipe. Lots of recipes say 'warm water' but I have found that it's not hot enough to properly activate the yeast. I have never used a thermometer to test the water, I just use hot water from my kitchen faucet. Garlic : I use garlic paste. You can use fresh garlic cloves that have been minced or pressed with a garlic press. Or use chopped garlic from a jar. Usually 1 teaspoon = 1 clove garlic. Twisting the Breadsticks : I have found the easiest way is to take each end of the breadstick, one end in each hand, and twist the opposite way on each side. You could also not twist them at all and leave them in normal breadstick shape.
