Christmas Chex Mix

Christmas Chex Mix is an ooey gooey snack mix with Chex cereal, golden grahams, coconut, and almonds covered in a buttery & sugary syrup. This snack mix stays soft for days and it's so addicting!

Ingredients

  • 6 cups Rice Chex cereal
  • 6 cups Golden Grahams cereal
  • 2 cups sweetened coconut flakes
  • 2 cups sliced almonds
  • cups granulated sugar
  • cups light corn syrup
  • 1 cup (2 sticks) salted butter

Instructions

  • Prepare a cookie sheet by spraying it very lightly with cooking spray or line it with parchment paper or tin foil. Set aside.
  • In a really large bowl, or two separate bowls if you don't have a really large bowl, add the corn Chex cereal, golden grahams cereal, coconut, and almonds. Stir together to combine.
    * If you don't have a bowl big enough simply divide the ingredients between two bowls.
  • In a medium saucepan, over medium-high heat, combine the granulated sugar, corn syrup, and butter. Let melt and bring it to a boil. Once boiling, boil it for 2 minutes, and then remove it from the heat.
    Let the syrup cool for 2 minutes before pouring it over the cereal mix.
  • Pour the syrup over the snack mix and mix it really well to coat all the cereal.
  • Dump the Chex mix onto the cookie sheet and spread it out as best you can. It will be overlapping and on top of each other and that's ok.
  • Let the Chex mix sit out at room temperature for 2-3 hours so the cereal can soften and the flavors combine.
    Store leftovers in a covered bowl, or a gallon-sized Ziploc bag, at room temperature for several days.

Notes

Nutrition Information : Obviously 1 cup may be a large portion, but I figure it's about normal because you will find yourself munching on it lots. Obviously, you could eat 1/2 cup portion and cut the calories in half. It's more of a general guide as the serving sizes and portions of a snack mix are hard to decide. 
Corn Syrup : Some won't like this answer (and I am sorry!) but no you cannot use something else in it's place. There really is nothing else to use. The corn syrup gives the snack mix the 'ooey gooey' and it's what keeps it soft even after sitting out. 
Nuts : Use any type of nut you prefer. I think sliced almonds are the best but another good one that I do lots is to use half sliced almonds and half chopped cashews. If you use larger sized nuts like pecans or walnuts just be sure to make sure they are chopped before adding them into the mix.
