(no flour!) Triple Peanut Butter Monster Cookie Bars

No flour triple peanut butter monster cookie bars are loaded with peanut butter, peanut butter chips, mini reese's pieces, and oatmeal! This recipe makes an entire cookie sheet of bars & they freeze perfectly. Perfect for lunchboxes or snacks for the week.

Ingredients

  • 1/2 cup (1 stick) butter softened
  • 1 ½ cups creamy peanut butter
  • 1 cup light brown sugar
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 1 ½ cups quick oats
  • 3 cups old-fashioned oats
  • 1 teaspoon baking soda
  • 1 bag (9.9 oz) Reese's Pieces
  • 1 cup peanut butter chips

Instructions

  • Heat oven to 350° F. Prepare a cookie sheet (12" x 18") and spray with cooking spray. Set aside.
  • In the bowl of a stand mixer with the paddle attachment (you can also use a mixing bowl + hand mixer) add the butter, peanut butter, brown sugar, and granulated sugar. Beat on medium speed until fluffy and pale in color. This takes 1-2 minutes.
    * Beat the full 1-2 minutes, or until pale in color, for the best texture of cookie bars.
  • Add the eggs and vanilla extract. Mix together.
  • Add in the oats and baking soda. Mix until combined.
  • Add in the Reese's Pieces and peanut butter chips. Beat on low speed just until combined.
    * Reserve some of each to spread on top of the bars before baking. This is optional. Just makes them look pretty.
  • Dump the dough onto the cookie sheet and spread it out. If the dough is too sticky, try spraying your hands with cooking spray or using a silicone spatula to spread it out.
    Sprinkle the reserved or extra Reese's Pieces and peanut butter chips on top and gently press down.
  • Bake for 17-20 minutes. The edges will be lightly browned and the middle will still look pale and underdone, but it will finish baking as it cools.
  • Let cool for at least an hour so the bars can firm up and come together. Cut into squares with a pizza cutter (so easy this way) or a knife.

Notes

Peanut Butter : Do not use all-natural peanut butter in this recipe. For best results, and texture of cookie bars, use regular peanut butter (Jif, Skippy, Peter Pan, etc) and avoid the jars that say 'all-natural' or something similar. 
Freeze : Place 2 into a sandwich size Ziploc bag and place in freezer. They are good cold from the freezer, or set them on the counter to thaw a bit, or microwave them for 10-15 seconds. They're also perfect for lunch boxes. Put a frozen bag of them into the lunch box and they will be ready by lunch time.
