Heat oven to 400°. Spray a cookie sheet lightly with cooking spray. Set aside.
Prepare Chicken : Cut each chicken breast in half horizontally. You don't have to do this, but eating a thinner chicken breast is always easier, especially for kids, and it cooks faster. This recipe can be made with either 4 chicken breasts or 3, depending on how many servings you want.
Sprinkle both sides of each chicken piece with salt and pepper.
In a shallow bowl, combine bread crumbs, panko, parmesan cheese, basil, and parsley. Stir together.
In another shallow bowl, combine eggs and garlic. Stir together.
Dip both sides of chicken in egg mixture and then coat it with the breadcrumb mixture. Press the breadcrumbs into the chicken and place on the cookie sheet.
Repeat with remaining chicken pieces. Lightly spray the top of the chicken breasts with cooking spray.
Cook for 15 minutes. Turn chicken over, lightly spray the tops with cooking spray, and cook for 10 more minutes or until the inside temperature reaches 165°.
Spoon 2-3 tablespoons of pasta sauce over each chicken and then top with some shredded mozzarella cheese. Bake for 2-3 minutes or until cheese is melted.* You can also broil the chicken if preferred.
Serve immediately.

Notes
Chicken : If the chicken breasts you are using are really large then just use 3 of them. I use 4 smaller chicken breasts that have been cut in half horizontally. If you prefer the larger, thicker chicken pieces then leave them as is. Increase the baking time as they may need more cook time. Parmesan Cheese : Use the cheap grated parmesan cheese that comes in the can with the green lid. You can use fresh shredded parmesan cheese if wanted but it does tend to burn easily in the oven.
