Cheesy Chicken Taquitos are baked in the oven so you get that crispy crunch without the deep fry! Flour tortillas filled with chicken, cream cheese, shredded cheese, seasonings, cilantro, and fresh lime juice. Easy to make with leftover chicken or pick up a Rotisserie chicken. Serve with your favorite dips.
Heat oven to 425° F. Prepare a cookie sheet by spraying with cooking spray or use parchment paper.
Combine all taquito ingredients into a mixing bowl and stir until it's combined well. * It's important to make sure the cream cheese is well softened so it will mix in smoothly with the other ingredients. I microwave the cream cheese for 30 seconds to make sure it's softened.
Spread about 2 tablespoons of the taquito filling onto the bottom half of a flour tortilla. Roll up tightly and place it, seam side down, on the prepared cookie sheet. Repeat with remaining tortillas.
Lightly spray the tops of the taquitos with cooking spray and sprinkle on some coarse salt (like kosher salt, if wanted). Bake for 15-20 minutes or until the taquitos are golden brown.
Serve with your favorite dips of choice! Sour cream, salsa, guacamole, pico de gallo.

Nutrition Information : This is for one taquito with no dips. It includes the tortilla and all the ingredients inside. This recipe makes about 20 taquitos. Serving size also depends on how full you stuff the taquitos. If you want more filling then you will get less taquitos. Cream Cheese : I use regular cream cheese but the reduced-fat cream cheese will work just fine in this recipe. Make sure it is softened before adding it into the mixing bowl along with the other ingredients. I microwave the cream cheese for 30 seconds to make sure it's softened. If the cream cheese is too cold it will have a harder time mixing in smoothly with the other ingredients. Cheese : Use any shredded cheese you want! We like Pepper Jack (for a kick), cheddar, Colby jack, or Monterey Jack cheese in these taquitos. Want It Spicy? : The recipe as written has a mild kick to it. If you want it spicier then use more chili powder, add cayenne red pepper, use a hot salsa, and use Pepper Jack shredded cheese. Tip : If you're having a hard time getting a tight roll on the tortillas, try warming up the flour tortillas before using. I just open up (to vent it) the tortilla bag and put it in the microwave for 20-30 seconds to get the tortillas warm and pliable.
