Easter Candy Rice Krispies

Easter Candy Rice Krispies are a colorful and fun Easter treat recipe! Classic rice krispies with pastel colored m&m candies and mini robin eggs. Easy to make with only 5 ingredients and they are so fun to customize with whatever candy or sprinkles you have at home.

Ingredients

  • 6 tablespoons salted butter
  • 1 bag (16 oz) mini marshmallows
  • 6 cups Rice Krispies cereal
  • teaspoon vanilla extract
  • 1 cup Easter pastel M&M's
  • 1 cup Mini Robin Eggs roughly chopped
  • Easter colored sprinkles optional

Instructions

  • Prepare a 8x8 baking dish by spraying lightly with cooking spray. Or you can line it with tin foil or parchment paper to make it easier to pull out the bars and cut into even slices.
  • In a large sauce pan or soup pot, over medium heat, add the butter and mini marshmallows. Cook over medium heat until the mixture is completely smooth and melted together.
    * Stir frequently to help it melt and to avoid burning
  • Take the pan off the stove and add the vanilla extract and cereal. Stir well until all the cereal is coated in the melted marhmallows.
    * If you want softer/slightly melted M&M's then add them in with the cereal and vanilla extract.
  • Add the M&M candies and gently stir.
    * If you want sprinkles inside the treats then add them here with the M&M's
  • Press the Rice Krispies treats mixture into the prepared pan. Gently press the mini robin egg candies (to ensure they stay in place) into the bars. You can also put sprinkle on the top if wanted.
  • Let the bars set at room temperature, for 1 hour, before slicing and eating.

Notes

Tip : To avoid the chocolate m&m's from melting while stirring them in with the cereal, you can wait to add them until after you have mixed in the cereal OR put the m&m's in the freezer so they're colder when you add them in and they won't melt as easily. 
Tip : Heat the marshmallows + butter low & slow. Don't try to rush it by turning the heat higher. And make sure you melt them until it's completely melted and smooth. There should not be any soft chunks of marshmallow at all when you take the pan off the heat.
Sprinkles : I love to add some Easter colored sprinkles either on top of the bars or inside the bars when I mix in the cereal. Only use the small ball shaped sprinkles on top of the bars. If you try to mix those into the bars with the cereal, the colors will bleed. 
Candy : Use any Easter candy you want in this recipe! Cadbury Mini Eggs are always a good choice. Reese's Peanut Butter Eggs are of course amazing. I like to press them into the top of the treats in the egg shape, meaning I don't chop them up.
