Ingredients
1/2cup (1 stick)salted buttermelted
1½cupsall-purpose flour
1cupgranulated sugar
1cupwhole milk
2teaspoonsbaking powder
2cupsfresh raspberries(washed & patted dry)
Instructions
Preheat oven to 350° F. Prepare a 8x8 baking dish and spray with cooking spray.
Pour the melted butter into the bottom of the baking dish.
In a small mixing bowl, stir together the flour, sugar, milk, and baking powder until it's well combined and no flour clumps remain. Pour the batter into the baking dish over the melted butter.
Evenly scatter the fresh raspberries on top of the batter. Do not stir!
Bake for 45-50 minutes, or until the top of the cobbler is golden brown and it's cooked through.
Serve the cobbler immediately with a scoop of vanilla bean ice cream on top.
Notes
Raspberries : Use fresh raspberries! Frozen raspberries do not work as well in this recipe. Butter : If using unsalted butter, add some salt (about 1/2 teaspoon) in with the baking powder. Tip : This cobbler is best eaten within a couple hours of making it. I do not recommend making it ahead of time before serving. You want to serve it immediately from the oven with a scoop of ice cream. Tip : Once you add the raspberries on top of the batter, do not stir them in. Leave them on top (like in the pictures above in the post).
