Equipment

Ingredients

Special Sauce "Spread"

  • 1/3 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon dill pickle relish
  • 1 teaspoon yellow mustard
  • 1/4 teaspoon paprika

In N Out Burgers

  • 1 pound ground beef (I use 90/10)
  • 1 yellow onion grated
  • 1 large egg white
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon seasoning salt
  • ½ teaspoon black pepper

For Serving

  • 7 hamburger buns
  • 7 slices American cheese
  • sliced tomatoes
  • sliced white onion
  • green leaf lettuce or Iceberg lettuce

Instructions

  • Make the secret sauce by combining all of the ingredients in a small mixing bowl, and stirring until combined. Store covered in the refrigerator until ready to use.
  • In a large bowl add ground beef, grated onion, egg white, worcestershire sauce, seasoning salt, and black pepper. Mix together with a fork, wooden spoon, or clean hands until combined.
    * To make it easier, I like to take my hands and crumble the ground beef into the bowl and then add the ingredients. This makes it easier to mix together.
  • Shape mixture into 7 thin patties. This is a copycat recipe and the patties are supposed to be really thin.
    * I like to use a hamburger press for this.
  • Grill patties, or cook in a skillet pan (grilling is preferred), until no longer pink on the inside and at a temperature of 160° F.
This takes about 4-5 minutes per side.
    * If you want to toast the buns, throw them on the grill while the burgers are cooking.
  • Place a slice of american cheese on each hamburger and let it melt, about 30 seconds.
  • Spread secret sauce on each inner bun and place grilled patties on the bottom bun. Top with lettuce, tomato, and thinly sliced onion.

Notes

Ground Beef : I use 90/10 or 93/7 but I know lots of people prefer a fattier ground beef mixture when making burgers. Any will work.
Onion : Use the fine side of a cheese grater to grate the onion. You don't want to add excess moisture into the ground beef mixture, so if the onion is really wet take a paper towel and dab it or use your hands and try to squeeze the excess moisture out.
Burger Press : I prefer using a burger press when making burgers. It gets them all a uniform size and flattens them out thin. (I have linked the burger press that I use above in the recipe card. It is an affiliate link, meaning that if you purchase from that link, I make a very small amount of money.)
