HOW TO MAKE CREAMY TOMATO BASIL SOUP IN THE SLOW COOKER

Add in the canned diced tomatoes, celery, carrots, onion, basil, oregano, and chicken broth. Stir to combine and cover with the lid.

Cook on LOW heat for 6-7 hours. Once done, use an immersion blender, or transfer the soup to a blender in batches, and blend until smooth (if wanted).

When soup is done cooking and blended, prepare the roux. Melt the butter in a saucepan, over medium-high heat, once melted add the flour, salt, and pepper and stir with a whisk for about 1 minute.
