How To Make Fiesta Chicken Casserole

Cook pasta, to al dente, according to package directions. Don't forget to salt the pasta water. I use about 1 teaspoon salt. Learn more

While pasta is cooking, combine sour cream, salsa, taco seasoning, cumin, garlic powder, and onion powder in a large mixing bowl.

Add in the corn, black beans, chicken, and 1 cup of the shredded cheese. Stir together to combine.

CAN I FREEZE FIESTA CHICKEN CASSEROLE? : I don't like freezing stuff like this because I think pasta once it's frozen and thawed has a weird texture to it. But if you are familiar with freezing then I am sure this casserole would freeze just fine. Learn more
