Andes Mint Hot Chocolate

Warm up this winter with Andes Mint Hot Chocolate! This homemade hot chocolate uses whole milk, heavy cream, and chopped Andes chocolate mints to make the sweetest & creamiest mint hot cocoa ever.

Ingredients

  • cups whole milk (or half and half)
  • 1/2 cup heavy cream
  • 1 box (4.67 oz) Andes mints unwrapped and chopped
  • ½ teaspoon vanilla extract

Optional Garnishes

  • whipped cream
  • mint cookies (Keebler's grasshopper cookies)
  • additional Andes mints (chopped or whole)

Instructions

  • In a small saucepan, over medium heat, add the whole milk, heavy cream, chopped Andes mint, and vanilla extract.
    Let it cook and come to a simmer, while stirring frequently to prevent the chocolate from burning. Once it's warmed through and hot, and the hot chocolate is smooth and melted together, it's ready.
    * This cook time takes about 5 minutes
  • Pour the hot chocolate into mugs.
    Top with whipped cream and a mint cookie, or add some additional chopped Andes mints on top or a whole mint.

Notes

Serving Size : I can get 3 servings out of this recipe with each serving being about 3/4 cup. If you want larger servings then plan on getting 2 servings from this recipe.

Tip : If you're wanting to keep this warm for several hours for a party or gathering, here is what you can do. Place the hot chocolate (after it has simmered and combined on the stove top) into a slow cooker on warm heat for several hours. If you find that the warm setting is not hot enough then turn it to LOW heat. Just make sure you are not boiling the hot chocolate, or else the chocolate will curdle and it will taste burnt. 
You can also just leave the hot chocolate inside the sauce pan, turn the heat to low, and leave it for a few hours that way. Watch it and stir it often to avoid it from burning to the sides of the pan. 
Garnishes : You can use a mint cookie like from the Keebler brand (Grasshopper cookies) or top it with an Andes mint (chopped or whole). If using Andes mints on top, you will need purchase additional mints for that.
