Mini Corn Dog Bites

These Corn Dog Bites are a kid-favorite easy dinner idea or after school snack! A store-bought cornbread mix mini muffins are filled with a piece of hot dog and then baked to golden brown perfection in the oven. Serve with your favorite dips like ketchup, mustard, honey mustard, or dill pickle relish.

Ingredients

  • 1 box (8.5 oz) Jiffy corn muffin mix
  • 1 large egg
  • 1/3 cup whole milk
  • 5 hot dogs

Instructions

  • Preheat the oven to 375℉. Spray one 24-count mini muffin pan with cooking spray. Set aside.
  • In a mixing bowl, stir together the Jiffy corn muffin mix, egg, and whole milk until combined well. Batter will be slightly lumpy and that's ok.

  • Cut each hot dog into 1-inch slices.

  • Fill each mini muffin hole halfway with the batter. Gently press one piece of hot dog into the center of each one.

  • Bake for 10-12 minutes or until golden brown.
  • Allow the corn dog bites to cool in the pan for 5 minute before removing them.
    Serve with your favorite dips like ketchup, mustard, honey mustard, dill pickle relish, or ranch.

Notes

Hot Dogs : Depending on what size the hot dogs are that you are using, may mean that you get less slices per hot dog or more slices (the small 1-inch slices). The longer bun-length hot dogs will make mire 1-inch slices so you might not need 5 of them. 
Spray Muffin Tins Well : Make sure that you take a few minutes to ensure that all the mini muffin cups are sprayed with cooking spray. The bottom and sides. This will ensure that the corn dog bites will easily come out when they're done. 
Small Sliced Hot Dogs : You don't want the slices of hot dog to be too large or else they won't fit in the mini muffin tin. Each slice should be 1-inch or slightly less. 
Don't Overfill Mini Muffin Tins : Make sure that you are not over-filling the mini muffin tins. We don't want the batter to overflow out of the muffin cup. Halfway full is only about 1 tablespoon of batter.
