Mixed Berry Sugar Cookie Cobbler is a deliciously sweet mixed berry cobbler with an easy buttery sugar cookie mix topping. You only need 4 ingredients to whip this easy dessert up!
Preheat the oven to 350℉. Lightly spray a 9x13 baking pan with cooking spray.
Dump the frozen berries into the baking pan. Sprinkle the cornstarch over top and stir to combine.
30-32 oz frozen mixed berries, 1 tablespoon cornstarch
In a medium mixing bowl, stir together the sugar cookie mix (dry, unprepared) and the melted butter until combined. Spoon the mixture over top the frozen berries in the pan.
Bake for 40-45 minutes or until the cobbler is golden brown and the fruit is bubbly.
Serve warm with a scoop of vanilla bean ice cream!

Frozen Berries : I buy two (16 ounce) bags of frozen fruit for this recipe, which equals 32 ounces. If you can find it, some stores sell a 30 ounce larger bag of frozen mixed berries. You can buy a bag of mixed berries OR buy 1 bag raspberries + 1 bag blueberries. There are also frozen blackberries too. Pick your fave combination or just buy a bag of mixed berries. Tip : This dessert is best made right before you need to serve it. It's not a dessert that can be prepped and baked ahead of time. It's best served within a few hours of making it. For best results, serve it warm with a scoop of ice cream or whipped cream on top.
