Sugar Cookie Mixed Berry Cobbler Recipe

One of my favorite summertime desserts, or a quick weeknight dessert, is always a cobbler or crisp fruit recipe that’s simple to make. This mixed berry cobbler is only 4 ingredients and it’s topped with a dry sugar cookie mix and melted butter.

So simple to make and there are so many fun variations of this simple sugar cookie cobbler dessert.

It’s a delicious mix between these Family Favorite Sugar Cookies and this Berry Crisp Dump Cake.

Why We Love This Easy Berry Cobbler Recipe

Ingredients Needed

  • Frozen Mixed Berries – Depending on your grocery store, you may be able to find a 30 oz or 32 oz bag of frozen mixed berries. If not, buy two bags (16 oz each) for this recipe. Anywhere from 30 ounces to 32 ounces of frozen berries will be great. You don’t even have to buy the ‘mixed berry’ pack. You could buy a bag of frozen blueberries + a bag of frozen raspberries.
  • Cornstarch
  • Sugar Cookie Mix – This is a pouch of dry sugar cookie mix that you will find in the baking aisle by the cake mixes and brownie mixes.
  • Melted Butter

How To Make Mixed Berry Sugar Cookie Cobbler (Step-by-Step Process Directions)

  1. Preheat the oven to 350 degrees F.
  2. Dump the frozen berries into a 9×13 baking dish. Sprinkle the cornstarch over the berries and stir to combine.
  3. In a medium mixing bowl, stir together the sugar cookie mix and melted butter until combined well. Spoon the mixture over the berries.
  4. Bake for 40-45 minutes or until the cobbler is golden brown and bubbly.
  5. Serve with vanilla ice cream or whipped cream.

Can I Make This Like a Dump Cake?

If you want to, you can make this dessert even easer to make by sprinkle the cookie dough mix over top and then slicing the butter (instead of melting it) very thinly and laying the butter over top the cookie mix. This might result in dry spots but it would work and be easier to make. I prefer remixing the melted butter in with the cookie mix that way all the cookie mix gets coated in butter.

Can I Make Any Changes To This Recipe?

Yes! One of my favorite things about this recipe are the endless variations that you can do with it. Use any frozen fruit, any combination of frozen fruit, and you can even try using a different cookie mix like snickerdoodle or a chocolate chip cookie mix.

Are Leftovers Good? How Do I Store Them?

This dessert is best served within a few hours of making it. If you do have leftovers, cover the pan with a lid or plastic wrap and keep it at room temperature for up to 3 days. Because of the crunchy sugar cookie cobbler topping, it’s best to eat within a few hours of making it. Because of this, I also don’t recommend making this dessert ahead of time. It’s so simple to make that it really is easy just to throw together at the last minute.

Recipe Tips

  • For best results make sure you use frozen berries and don’t substitute with fresh berries.
  • Buy a bag(s) of mixed berries or buy two different bags like frozen raspberries, frozen blueberries, or blackberries. I usually buy a bag of frozen blueberries + a bag of frozen raspberries. That is the combo that we like best.
  • The recipe calls for 30-32 ounces of frozen berries. Some stores sell a larger 30 ounce bag, but mostly you will find smaller 16 ounce bags of frozen fruit. So buy two of them to equal 32 ounces.
  • The only way to eat this sugar cookie cobbler with mixed berries is with a scoop of vanilla bean ice cream! The warm juicy fruit pairs perfectly with the creamy and cold ice cream. And the ice cream just melts right into the cobbler.
  • This cobbler is meant to be served warm!

  • 30-32 oz frozen mixed berries
  • 1 tablespoon cornstarch
  • 1 pouch (17.5 oz) sugar cookie mix
  • 1/2 cup (1 stick) butter melted

Instructions

  • Preheat the oven to 350℉. Lightly spray a 9×13 baking pan with cooking spray.
  • Dump the frozen berries into the baking pan. Sprinkle the cornstarch over top and stir to combine.
    30-32 oz frozen mixed berries, 1 tablespoon cornstarch
  • In a medium mixing bowl, stir together the sugar cookie mix (dry, unprepared) and the melted butter until combined. Spoon the mixture over top the frozen berries in the pan.
    1 pouch (17.5 oz) sugar cookie mix, 1/2 cup (1 stick) butter
  • Bake for 40-45 minutes or until the cobbler is golden brown and the fruit is bubbly.
  • Serve warm with a scoop of vanilla bean ice cream!

Frozen Berries : I buy two (16 ounce) bags of frozen fruit for this recipe, which equals 32 ounces. If you can find it, some stores sell a 30 ounce larger bag of frozen mixed berries. You can buy a bag of mixed berries OR buy 1 bag raspberries + 1 bag blueberries. There are also frozen blackberries too. Pick your fave combination or just buy a bag of mixed berries. 
Tip : This dessert is best made right before you need to serve it. It’s not a dessert that can be prepped and baked ahead of time. It’s best served within a few hours of making it. For best results, serve it warm with a scoop of ice cream or whipped cream on top.
