S'mores Strawberries

Get all the gooey goodness of classic s'mores with these chocolate dipped S'mores Strawberries. Juicy red strawberries get dipped in melted marshmallows, melted milk chocolate, and then finished off with a graham cracker crumble.

Ingredients

  • 12 fresh strawberries
  • 4 whole graham cracker sheets
  • 3 cups mini marshmallows
  • 1 cup milk chocolate chips

Instructions

  • Strawberry Prep : Place the strawberries into a colander and run cold water over to rinse them. Layer paper towel on top of a kitchen towel and put the rinsed strawberries on it to dry. To speed the drying up, take a paper towel and very gently pat the strawberries dry. They must be completely dry before dipping them into the chocolate.

  • Prep : Lay a piece of wax paper or parchment paper onto the countertop. Spray it lightly with cooking spray (this helps the melted marshmallow layer not stick to the paper).
    Crush the graham crackers into very fine crumbs and set them in a bowl, and set aside for later.
    * If you are using already crushed graham cracker crumbs, it's about 1/3 cup of crumbs.

Marshmallow Layer

  • Add the mini marshmallows into a large microwave-safe bowl. Microwave on high for 30 seconds, then stir. Continue heating in 30-second increments, stirring after each, until it's melted and smooth.
    * Make sure to use a large bowl because the marshmallows will double in size and expand while cooking in the microwave.
    3 cups mini marshmallows
  • Working one strawberry at a time, dip the strawberry 3/4 of the way into the melted marshmallows. Place it on the prepared parchment paper sheet and repeat with the remaining strawberries. Allow the strawberries to set for 20 minutes at room temperature.

Chocolate & Graham Layer

  • Add the chocolate chips to a small microwave-safe bowl. Microwave for 30 seconds, then stir. Continue melting in 30-second increments, stirring well after each, until it's smoothly combined.
    * This should not take too long. Make sure you stir after each 30 seconds, because as you stir, the chocolate melts and comes together in a smooth texture. Don't overheat as that can make the chocolate seize up.
    1 cup milk chocolate chips
  • Dip each strawberry into the melted chocolate (about 1/2 way up the marshmallow layer) and immediately dip the tip of the strawberry into the graham cracker crumbs.
  • Allow the strawberries to set, at room temperature, for 30 minutes to 1 hour until hardened.

Notes

Chocolate Layer : Use milk chocolate chips, semi-sweet, or dark chocolate chips. You can also use a chocolate baking bar that has been chopped up and microwave according to package directions. You can use milk chocolate melting wafers (Ghiradelli brand) or chocolate brown candy melts instead. I actually prefer using the Ghiradelli melting wafers because they are easier to heat in the microwave. Any of the options will work above. 
Dry Room Temperature Strawberries : The strawberries need to be completely dried before being dipped in the marshmallow. The dipped layers won't adhere to the strawberry if it's even a little damp. The berries need to also be at room temperature before dipping. If they're too cold, like straight from the fridge, the marshmallow layer will have a hard time sticking to the strawberry. If you rinse and dry them at room temperature that will be long enough so that they're not too cold to dip. 
Storage : These are best served at room temperature after they have hardened. For leftovers, store in the fridge. The longer they sit at room temperate, the chocolate gets softer and the strawberries will give off some juice.
