Get all the gooey goodness of classic s’mores with these chocolate dipped S’mores Strawberries. Juicy red strawberries get dipped in melted marshmallows, melted milk chocolate, and a graham cracker crumb layer.

S’mores Strawberries Recipe (Chocolate and Marshmallow Dipped Strawberries)

You’re going to love the classic combination of gooey melted marshmallows + melted milk chocolate + graham crackers with the taste of a sweet and juicy strawberry.

You could put those classic s’mores flavors on anything and it would taste amazing! So why not strawberries?!

There are so many ways to decorate plain strawberries by dipping them in chocolate – like these Carrot Patch Chocolate Covered Strawberries (perfect for Easter) or Red White and Blue Strawberries (Memorial Day and 4th of July). So why not have a fun chocolate dipped strawberry for the summertime…. or anytime!

Ingredients Needed to Make S’mores Strawberries (Only 4 Ingredients!)

  • Fresh Whole Strawberries – You need 12 large strawberries for this recipe. If the berries you are using are smaller, that’s fine, you will just need more of them in order to use up the melted marshmallow and chocolate. Make sure that you rinse the strawberries and then pat them dry with a paper towel. The worst thing you can do, when making chocolate dipped strawberries, is try to dip wet or damp berries into the melted chocolate – it won’t work!
  • Mini Marshmallows – These get melted in the microwave. I don’t recommend using large marshmallows because marshmallows expand a lot while cooking inside the microwave, so unless you have a really large microwave and/or a very large mixing bowl, the larger marshmallows will more likely expand over.
  • Milk Chocolate Chips – For less sweetness you can use semi-sweet chocolate chips or even dark chocolate chips. You can even use candy melts or melting wafers instead of chocolate chips. Melting wafer or candy melts are usually more fail-proof and easier to work with.
  • Whole Graham Cracker Sheets – 4 graham cracker sheets get crushed for an easy crumble garnish on top of the melted chocolate layer.

How To Make Chocolate Dipped S’mores Strawberries

  1. Strawberry Prep : Place the strawberries into a colander and run cold water over top of them to rinse them. Place the strawberries on top of a layer of paper towel over top a kitchen towel, to let the dry. To speed up this process use paper towel to very gently dab the berries dry.
  2. Prep : Place a sheet of parchment paper or wax paper on the counter top (or on a baking sheet) and spray it with cooking spray. The spray ensures that the melted marshmallows won’t stick to the paper once the berries are dipped in it. Crush the graham crackers and place them in a small dish. Set aside for later.
  3. Marshmallow Layer : Add the mini marshmallows into a large microwave-safe bowl. Microwave on high for 30 seconds. Stir. Continue melting in 30-second increments until smooth and creamy. Working one strawberry at a time, dip the strawberry 3/4 of the way into the melted marshmallows. Place on the parchment paper or wax paper and allow them to dry for 20 minutes.
  4. Chocolate Layer : Once the marshmallow layer has set melt the chocolate. Add the chocolate chips to a microwave-safe small bowl. Microwave for 30 seconds, then stir. Continue in microwave in 30-second increments just until the chocolate is melted and smooth. Dip each strawberry into the melted chocolate, only about 1/2 way up the marshmallow layer. Immediately dip the strawberry into the crushed graham cracker crumbs. Allow the strawberries to set for 1 hour at room temperature.

What Chocolate Is Best To Use For Chocolate Dipped Strawberries?

The recipe calls for milk chocolate chips but feel free to use your favorite like semi-sweet chocolate chips or even dark chocolate chips instead.

You can also use a baking bar that has been chopped and melted according to package directions.

Use melting wafers (Ghiradelli brand) or candy melts (brown chocolate melts) and melt according to package directions. I actually prefer using the Ghiradelli melting wafers because they are so easy to work with and basically fail-proof.

Another options is to use chocolate flavored almond bark and melt according to the package directions.

How To Store Chocolate Dipped Strawberries

Store the s’mores strawberries in the refrigerator, in an airtight container, for up to 48 hours. These are best eaten within a few hours of making them. As they sit in the fridge, or even at room temperature, the strawberries will begin to leak some juice which makes the chocolate and marshmallow layer wet, which is also means the layers will start to break away from the strawberry.

Recipe Tips

  • Dry Room Temperature Strawberries – Make sure that you are using completely dry, room temperature strawberries. If the strawberries are even slightly damp or cold from the fridge, the layers will have a hard time adhering to the strawberry and instead fall off as they set and when eaten. If you are rinsing and drying the strawberries, that is enough to time for them to be at room temperature. Just don’t pull them straight from the fridge and immediately start dipping them.
  • Don’t Overcook The Chocolate – Make sure that you cook the chocolate chips in the microwave in 30-second increments, stirring well after each time. As you stir it the chocolate will melt and become creamy on its own, so stir it well before deciding if it needs another 30 seconds in the microwave.
  • Graham Cracker Crumbs – You can buy a box of graham cracker crumbs OR crush 4 whole graham cracker sheets. They’re easy to crush with clean hands or put them into a Ziploc bag and use something heavy (rolling pin, meat pounder) to crush them.
  • Dipping Tip – Use the Wilton’s dipping tools to help dip the strawberries. You can also stick a toothpick, or wooden skewer, into the strawberry to make it easier to dip them.

Ingredients
  

  • 12 fresh strawberries
  • 4 whole graham cracker sheets
  • 3 cups mini marshmallows
  • 1 cup milk chocolate chips

Instructions

  • Strawberry Prep : Place the strawberries into a colander and run cold water over to rinse them. Layer paper towel on top of a kitchen towel and put the rinsed strawberries on it to dry. To speed the drying up, take a paper towel and very gently pat the strawberries dry. They must be completely dry before dipping them into the chocolate.
    12 fresh strawberries
  • Prep : Lay a piece of wax paper or parchment paper onto the countertop. Spray it lightly with cooking spray (this helps the melted marshmallow layer not stick to the paper).
    Crush the graham crackers into very fine crumbs and set them in a bowl, and set aside for later.
    * If you are using already crushed graham cracker crumbs, it's about 1/3 cup of crumbs.

Marshmallow Layer

  • Add the mini marshmallows into a large microwave-safe bowl. Microwave on high for 30 seconds, then stir. Continue heating in 30-second increments, stirring after each, until it's melted and smooth.
    * Make sure to use a large bowl because the marshmallows will double in size and expand while cooking in the microwave.
    3 cups mini marshmallows
  • Working one strawberry at a time, dip the strawberry 3/4 of the way into the melted marshmallows. Place it on the prepared parchment paper sheet and repeat with the remaining strawberries. Allow the strawberries to set for 20 minutes at room temperature.

Chocolate & Graham Layer

  • Add the chocolate chips to a small microwave-safe bowl. Microwave for 30 seconds, then stir. Continue melting in 30-second increments, stirring well after each, until it's smoothly combined.
    * This should not take too long. Make sure you stir after each 30 seconds, because as you stir, the chocolate melts and comes together in a smooth texture. Don't overheat as that can make the chocolate seize up.
    1 cup milk chocolate chips
  • Dip each strawberry into the melted chocolate (about 1/2 way up the marshmallow layer) and immediately dip the tip of the strawberry into the graham cracker crumbs.
  • Allow the strawberries to set, at room temperature, for 30 minutes to 1 hour until hardened.

Notes

Chocolate Layer : Use milk chocolate chips, semi-sweet, or dark chocolate chips. You can also use a chocolate baking bar that has been chopped up and microwave according to package directions. You can use milk chocolate melting wafers (Ghiradelli brand) or chocolate brown candy melts instead. I actually prefer using the Ghiradelli melting wafers because they are easier to heat in the microwave. Any of the options will work above. 
Dry Room Temperature Strawberries : The strawberries need to be completely dried before being dipped in the marshmallow. The dipped layers won’t adhere to the strawberry if it’s even a little damp. The berries need to also be at room temperature before dipping. If they’re too cold, like straight from the fridge, the marshmallow layer will have a hard time sticking to the strawberry. If you rinse and dry them at room temperature that will be long enough so that they’re not too cold to dip. 
Storage : These are best served at room temperature after they have hardened. For leftovers, store in the fridge. The longer they sit at room temperate, the chocolate gets softer and the strawberries will give off some juice.
