Crockpot Southwest Chicken Burrito Bowls

Ingredients

  • pounds boneless, skinless chicken breasts (about 3 large chicken breast)
  • 1 can (15 oz) corn drained
  • 1 can (15 oz) black beans drained & rinsed
  • 1 can (10 oz) Rotel
  • 1 cup salsa
  • 1 lime (juiced)

Instructions

  • Spray the insert of the crockpot with cooking spray. Lay the chicken breasts on the bottom.
    1½ pounds boneless, skinless chicken breasts
  • Add in the corn, black beans, rotel, salsa, and fresh lime juice. Cover with the lid and cook on LOW heat for 6-7 hours.
    1 can (15 oz) corn, 1 can (15 oz) black beans, 1 can (10 oz) Rotel, 1 cup salsa, 1 lime
  • When done, use two forks to shred the chicken and then mix everything together to combine well.
  • Serve the chicken burrito filing over top some cooked rice and then pile high with all your favorite burrito toppings. Enjoy!

Notes

  • Make It Low Carb : Serve the burrito bowl filling over cauliflower rice or shredded lettuce. You can also omit or substitute any ingredient for the crockpot chicken mixture to be more low carb friendly. This meal itself is pretty healthy and low carb so just watch what you serve with it when you assemble the burrito bowl. 
  • Make It Spicy! : Add some additional dried seasonings with the taco seasoning like garlic powder, chili powder, chipotle powder, red cayenne pepper. You can also use some hot and spicy salsa, use a packet of spicy taco seasoning, or add some spicier ingredients like adobo sauce, hot sauce, a can of diced green chilis, or a can of chopped jalapeños in with the other crockpot ingredients. 
  • Swap Ingredients : The best part about this easy meal recipe is that anything can be switched or swapped to whatever you prefer. Use any variety of canned beans. Use your favorite salsa or try something new and use a black bean corn salsa or a mango salsa. Make it as spicy, or as mild as you prefer, by simply using mild or spicy ingredients.
