Chicken Burrito Bowl Recipe – Easy Dinner For Busy Weeknights

Easy prep, dump & go dinners are always my go-to! Especially during those busy back-to-school fall weeknights when my kids have all the activities going on. You won’t believe the simple prep time, literally minutes is all it takes, to get everything on the table to make a homemade burrito bowl. Everyone will love creating their own burrito bowl just how they like it!

Tender shredded chicken breasts, corn, black beans, Rotel tomatoes, salsa, and fresh lime juice create this southwest-inspired burrito filling that pairs perfectly with some Cilantro Lime Rice as the base and topped with all your favorite burrito fillings. 

Be sure and also try this family favorite dinner Southwest Chicken Pasta with that same southwest-inspired chicken filling with beans and corn, but this time paired with pasta!

Ingredients Needed To Make Burrito Bowls In The Crockpot 

  • Boneless, Skinless Chicken Breasts : The recipe calls for 1.5 pounds of chicken which is equal to about 3 large chicken breast pieces or 4 smaller ones. 
  • Canned Corn : Use yellow corn, white corn, southwestern corn, or a can of gold n’ white corn. I prefer using the gold n’ white corn which is a mix of yellow corn + white corn. 
  • Black Beans : These are the preferred bean for the southwest chicken burrito bowl filling but any bean will work in it. If you prefer pinto beans, white beans, or kidney beans then substitute the black beans for a different one. 
  • Rotel : This is a specific brand of tomatoes that has some added green chilies in the mix. It is so flavorful and adds a slight kick to the burrito filling. Not anything spicy, just really good flavor. 
  • Salsa : I recommend using a fresh salsa that you will find in the deli or produce area of the grocery store. They taste much better in this recipe. Of course, jarred or canned salsa can used with great results as well. Just make sure to use your favorite salsa variety!
  • Fresh Lime Juice
  • Mild Taco Seasoning Packet
  • Burrito Bowl Toppings : These are completely optional (although not really 😉) and will vary depending on what you prefer. I like to place some toppings inside bowls and serve these burrito bowls buffet-style, where everyone just creates and tops their own.

Step-by-Step Directions For Making Burrito Bowls (Southwest Chicken) In The Crockpot

  1. Spray the insert of the crockpot with nonstick cooking spray. Lay the chicken breast pieces in the bottom.
  2. Add the corn, black beans, Rotel, salsa, and fresh lime juice.

  1. Stir everything together. Cover with the lid and cook on LOW heat for 6-7 hours.

  1. Use two forks to shred the chicken and then stir everything together to combine.

  1. Serve the chicken burrito filling using a slotted spoon, over a pile of cooked rice and all the burrito toppings. Enjoy!

How To Meal Prep Burrito Bowls

Burrito bowls are a great recipe for meal prep! You can eat this delicious recipe the entire week for lunches… which is a very good thing. Here some tips for meal prepping burrito bowls. 

  • Get separate containers for each meal or day you want to eat it. 
  • Place a base of white rice, brown rice, or whatever rice you prefer into the bottom of the container. Then place a scoop of the southwest chicken burrito bowl filling on top. 
  • I like to either place the toppings in a separate compartment of the container OR you can place them on as you eat it for the next day’s lunch. Most meal prep containers have serval compartments inside them which makes it easy to put the toppings in there. 
  • You can also have little plastic container of sour cream, guacamole, and pico de gallo.
  • The meal prep containers will stay fresh in the fridge for up to 3-4 days.

How To Serve Southwest Chicken Burrito Bowls

First, you’ll want to start with a base of rice or for a low-carb version use a base of shredded lettuce or green leaf lettuce. Cilantro-lime rice, Spanish rice, cauliflower rice, or easy microwaveable rice pouches are all great options for the base. I personally love to either make my Easy Mexican Rice or Cilantro Lime Rice for the base of these burrito bowls. Add a scoop of the southwest chicken burrito bowl filling on top of the rice. 

Then it’s time for the fun part – all the toppings! Here are some topping ideas for burrito bowls. 

  • Shredded Lettuce, Green Leaf Lettuce, or Chopped Romaine Lettuce
  • Shredded Cheese
  • Diced Roma Tomatoes
  • Pico de Gallo – Here is a simple recipe we love for homemade pico de gallo
  • Guacamole – Try this creamy guacamole or salsa verde guacamole or buy some from the store. 
  • Avocado Slices or Chunks
  • Green Onion
  • Chopped Cilantro
  • Sliced Jalapeño
  • Sour Cream

  • Tortilla Chips or Strips
  • Chopped Red Onion

Recipe Tips

  • Make It Low Carb : Serve the burrito bowl filling over cauliflower rice or shredded lettuce. You can also omit or substitute any ingredient for the crockpot chicken mixture to be more low carb friendly. This meal itself is pretty healthy and low carb so just watch what you serve with it when you assemble the burrito bowl. 
  • Make It Spicy! : Add some additional dried seasonings with the taco seasoning like garlic powder, chili powder, chipotle powder, red cayenne pepper. You can also use some hot and spicy salsa, use a packet of spicy taco seasoning, or add some spicier ingredients like adobo sauce, hot sauce, a can of diced green chilis, or a can of chopped jalapeños in with the other crockpot ingredients. 
  • Swap Ingredients : The best part about this easy meal recipe is that anything can be switched or swapped to whatever you prefer. Use any variety of canned beans. Use your favorite salsa or try something new and use a black bean corn salsa or a mango salsa. Make it as spicy, or as mild as you prefer, by simply using mild or spicy ingredients.

Ingredients
  

  • 1½ pounds boneless, skinless chicken breasts (about 3 large chicken breast)
  • 1 can (15 oz) corn drained
  • 1 can (15 oz) black beans drained & rinsed
  • 1 can (10 oz) Rotel
  • 1 cup salsa
  • 1 lime (juiced)

Instructions

  • Spray the insert of the crockpot with cooking spray. Lay the chicken breasts on the bottom.
    1½ pounds boneless, skinless chicken breasts
  • Add in the corn, black beans, rotel, salsa, and fresh lime juice. Cover with the lid and cook on LOW heat for 6-7 hours.
    1 can (15 oz) corn, 1 can (15 oz) black beans, 1 can (10 oz) Rotel, 1 cup salsa, 1 lime
  • When done, use two forks to shred the chicken and then mix everything together to combine well.
  • Serve the chicken burrito filing over top some cooked rice and then pile high with all your favorite burrito toppings. Enjoy!
