Christmas Lofthouse Cookie Truffles

These festive Christmas Cookie Truffles use store-bought frosted Lofthouse sugar cookies to create little balls of sweet cookie goodness, dunked in chocolate, and then decorated with Christmas sprinkles.

Ingredients

  • 10 Christmas Lofthouse Frosted Cookies
  • 4 ounces cream cheese room temperature
  • 1 bag (12 oz) green candy melts
  • 1 tablespoon coconut oil
  • Christmas sprinkles

Instructions

  • Prep : Prepare a rimmed baking sheet by lining with parchment paper, tin foil, or wax paper.
  • Place the cookies into the bowl of a stand mixer using the paddle attachment, or use a large mixing bowl with an electric mixer, and mix on medium speed until the cookies are in fine crumbs.

  • Add in the cream cheese and mix until a smooth paste is formed. It's ok to mix for close to 1 minutes or more, as we want the mixture to be smooth.
    4 ounces cream cheese
  • Use a medium cookie scoop, or about 1.5 tablespoons of the dough, to scoop it out and then roll it into a ball with your clean hands. Place the cookie truffle balls onto a baking sheet lined with parchment paper or wax paper.
    * Scoop the dough into a clean hand, smoosh it around to make easier to roll smooth, and then roll the truffle ball between your two palms until smooth and round.
  • Put the truffles inside the fridge to chill for 10 minutes.
  • While in the fridge, melt the chocolate according to the package directions along with the coconut oil. Be sure and only melt the chocolate in the microwave in 30-second increments, stir well after each one, and then continue melting until it's completely smooth.
    1 bag (12 oz) green candy melts, 1 tablespoon coconut oil
  • Dip the truffles into the chocolate using a plastic fork with the center prong removed (my preferred way). Tap the fork on the edges to let the excess chocolate drain and drip off the truffle before placing it back onto the parchment paper baking sheet.
    * If needed, I like to use a toothpick to help nudge the truffle off of the fork.
  • Immediatly add sprinkles over top the truffle. Continue dipping the remaining truffles one at a time.

  • Allow the truffles to set and harden at room temperature for 15 minutes (or they can chill and set in the fridge until ready to serve). Enjoy!
