Candied Nuts

These crunchy and sweet Candied Nuts are oven toasted pecans and almonds with a sugar glaze and a hint of cinnamon and nutmeg. Your house will smell amazing with the wonderful aroma of caramelized nuts, cinnamon, and sugar - just like the holidays!

Ingredients

  • 3 cups unsalted pecan halves
  • 1 cup unsalted whole almonds
  • 1 large egg white (discard the yolk)
  • 1 teaspoon vanilla extract
  • 1/3 cup packed dark brown sugar
  • 1/4 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg

Instructions

  • Preheat the oven to 275℉. Lightly spray a rimmed baking sheet with nonstick cooking spray.
    * I do not recommend using parchment paper or tin foil to line the prepared baking sheet with, just spray it lightly. 
  • Mix the pecan halves and whole almonds in a large bowl until combined. 
    3 cups unsalted pecan halves, 1 cup unsalted whole almonds
  • Using either a stand mixer or a mixing bowl with an electric hand mixer, and beat the egg white and vanilla extract until thicker and bubbly. About 2-3 minutes on medium to medium-high speed.

  • Gently pour the egg white mixture over top the mixed nuts in the bowl and stir together until all the nuts are well coated. 
  • In a separate medium bowl, whisk together the dark brown sugar, granulated sugar, cinnamon, and nutmeg until well combined. 
    1/3 cup packed dark brown sugar, 1/4 cup granulated sugar, 2 teaspoons ground cinnamon, 1 teaspoon ground nutmeg
  • Pour the sugar coating over top the nuts and mix gently until all the nuts are well coated. 
  • Spread the nuts into a single layer on the prepare baking sheet using a rubber spatula. 
  • Bake for 35-45 minutes, stirring every 10 minutes, and until the nuts are dry and the sugar is crystallized. 
  • Remove the nuts from the oven and let cool to room temperature before serving. 

Notes

Serving Size : This recipe yields 4 cups of candied nuts. The nutrition information is for 16 servings with each serving being equal to 1/4 cup. 
Nuts : The recipe calls for unsalted nuts but if you prefer more sweet & salty then use lightly salted nuts. I don't recommend using the full salted, regular nuts in this recipe. Another option is to use whole walnuts. 
Brown Sugar : Either dark brown sugar or light brown sugar can be used just fine in this recipe. The dark brown sugar has a deeper, darker, and richer flavor (which is why the recipe calls for it) but light brown sugar will be just fine too.
