Ingredients
10cupspopped popcorn
6tablespoonsbutter
6cupsmini marshmallows
½teaspoonvanilla extract

Instructions
Prepare a large rimmed baking sheet (cookie sheet) by lining with parchment paper or wax paper. You can also put the parchment paper down on a clean countertop as well.
Place the popped popcorn into a large bowl.

Melt the butter inside a saucepan, over low-medium heat. Once melted, add the mini marshmallow and continuously stir until they are completely melted and it's a smooth mixture. Stir in the vanilla extract until combined.

Remove the pan from the heat and continue stirring it while you add the green gel food coloring.

Pour the green marshmallow mixture over top the popcorn inside the mixing bowl. Stir it well with a wooden spoon until all the popcorn is well coated and green.
Spread the grinch popcorn onto the parchment paper. Sprinkle the remaining 1 cup mini marshmallows over top along with the red M&M's.

Allow the popcorn to cool, at room temperature, before serving.
Notes
Spreading the marshmallow-coated popcorn can get really sticky! Spraying your hands lightly with cooking spray before handling the mixture will help. You can also spray the wooden spoon or rubber spatula with cooking spray to help spread it out onto the parchment paper.
Be sure to have the popcorn popped and inside the bowl before you melt the butter and marshmallows, or it could harden before you have the chance to pour it over the popcorn.
Add the food coloring in small increments - like one small drop at a time and start with one drop. Otherwise, the marshmallow mixture could clump up and you might end up with really green popcorn.
