These semi-homemade peppermint Candy Cane Brownies are full of minty flavor and are so easy to make with convenient ingredients like a brownie mix, crushed candy canes, mint chips, and some ingredients to 'doctor up' the brownie mix to make it taste homemade.

Ingredients
1box (18.3 oz)brownie mix
2largeeggs
1/2cupvegetable oil
1/4cupheavy cream
3/4cupmint chocolate chips or chunks(see notes)
1/3cupcrushed peppermint candy canes

Instructions
Preheat the oven to 350℉. Line a 9x13 baking pan with parchment paper or spray well with nonstick cooking spray. Set aside. * I spray the pan first with cooking spray and then line it with parchment paper. The spray helps the paper adhere and stay in place.
In a large mixing bowl, add the dry brownie mix, eggs, vegetable oil, and heavy cream. Use a whisk, or an electric hand mixer, to mix until fully combined (about 1-2 minutes). * I think it's easiest to use a hand mixer - start on low speed and increase as needed until combined.
1 box (18.3 oz) brownie mix, 2 large eggs, 1/2 cup vegetable oil, 1/4 cup heavy cream
Stir in the mint chocolate chips or chunks until combined.

Pour the brownie batter into the prepared pan. Sprinkle the crushed candy canes over top and then use a butter knife to gently swirl them into the batter. They do not need to be completely mixed in, just lightly swirl them into the top of the brownies.

Bake for 25-35 minutes or until a toothpick placed into the center comes out clean. The edges should be set and pulled away from the sides of the baking pan.
Remove from the oven and immediately top with the remaining crushed candy canes. Allow to cool for at least 30 minutes to 1 hour before cutting into squares.* If you want to serve them warmer then let them cool for 15 minutes to 30 minutes before cutting.

Notes
Mint Baking Chips/Chunks : Use Andes Mint baking chips OR chop up Andes Mint or Andes Peppermint chocolates. Or just use chocolate chips (semi-sweet, milk, dark).Brownie Mix : Use either a box of milk chocolate brownie mix, dark chocolate brownie mix, or chocolate fudge. I like the contrast of the dark chocolate brownie mix + peppermint so that is what the photos show.
