Easy Brownie Mix Candy Cane Brownies

Are you in need of a last minute Christmas treat? Well I’ve got a good one today for ya’! Things are always so busy during the holiday season and there is nothing better than super easy recipes that you can whip up in no time.

These candy cane brownies start with a brownie mix and then have a few additional ingredients that make it taste homemade (like heavy cream), and add-ins like candy canes and mint chocolate pieces.

These are impressive brownies that are easy to make with only one bowl and 6 ingredients.

Ingredients Needed

  1. Chocolate Brownie Mix : Use a milk chocolate, dark chocolate, or chocolate fudge. The dark chocolate pairs nicely with the bright peppermint flavors but any chocolate brownie mix will work great!
  2. Large Eggs
  3. Vegetable Oil
  4. Heavy Cream : I don’t recommend substituting this for a lower-fat milk because you want that fat, thickness, and richness for the brownies. If you must use something else, half and half is a suitable substitute that will yield similar results.
  5. Mint Baking Chips : These can be found in the baking aisle alongside the other chocolate chips OR try using some Andes Peppermint chocolate or Andes Mints, chop them up, and use those in the recipe.
  6. Crushed Peppermint Candy Canes : These are the classic red and white candy canes.

How To Make This Easy Christmas Treat (Printable Recipe Card Below)

Preheat the oven to 350 degrees F. Line a 9×13 baking pan with parchment paper or spray well with nonstick cooking spray. Set aside.

In a large mixing bowl, add the dry brownie mix, eggs, vegetable oil, and heavy cream. Use a whisk, or an electric hand mixer, to mix until full combined (about 1-2 minutes). I think it’s easiest to use a hand mixer – start on low speed and increase as needed until combined.

Stir in the mint chocolate chips or chunks until combined.

Pour the brownie batter into the prepared pan. Sprinkle the crushed candy canes over top and then use a butter knife to gently swirl them into the batter. They do not need to be completely mixed in, just lightly swirl them into the top of the brownies.

Bake for 25-35 minutes or until a toothpick place into the center comes out clean. The edges should be set and pulled away from the sides of the baking pan.

Remove from the oven and immediately top with the remaining crushed candy canes. Allow to cool for at least 30 minutes to 1 hour before cutting into squares. If you want to serve them warmer then let them cool for 15 minutes to 30 minutes before cutting.

How To Store Leftovers

Any leftovers should be stored, in an airtight container or a covered plate with plastic wrap, at room temperature for 4-5 days.

If you want to store them longer than keep them in the fridge for up to a week.

If wanting to freeze the candy cane brownies, I recommend wrapping each brownie individually in plastic wrap and then again in foil before freezing. Thaw before serving (fridge or room temperature) or they can also be warmed up in the microwave for 15-25 seconds for a fresh, gooey brownie treat.

Can I Make Any Changes To This Peppermint Candy Cane Recipe?

  • Frosting : Make peppermint frosted brownies by making your favorite frosting (chocolate or buttercream) and then garnishing the frosting with lots of chopped candy cane pieces or chopped Andes Peppermint chocolate pieces. Or make it even easier and buy a can of white frosting, or chocolate frosting, from the store and spread that over top the cooled brownies.
  • Add-Ins : Use any chocolate chips (milk, semi-sweet, dark), or white chocolate chips in this recipe. Or try chopping up some peppermint chocolates like Andes Mints or the Ghiradelli peppermint bark chocolate would make a great addition to these brownies. Chopped nuts are another great addition as well.

  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/4 cup heavy cream
  • 3/4 cup mint chocolate chips or chunks (see notes)
  • 1/3 cup crushed peppermint candy canes

Topping/Garnish

  • 1/3 cup crushed peppermint candy canes

Instructions

    * I spray the pan first with cooking spray and then line it with parchment paper. The spray helps the paper adhere and stay in place.

Notes

Mint Baking Chips/Chunks : Use Andes Mint baking chips OR chop up Andes Mint or Andes Peppermint chocolates. Or just use chocolate chips (semi-sweet, milk, dark).
Brownie Mix : Use either a box of milk chocolate brownie mix, dark chocolate brownie mix, or chocolate fudge. I like the contrast of the dark chocolate brownie mix + peppermint so that is what the photos show.
