Preheat the oven to 350℉. Line a cookie sheet with parchment paper (for best results) or spray with cooking spray. Set aside.
In a large mixing bowl, add the creamy peanut butter, granulated sugar, egg, and vanilla extract. Stir with a wooden spoon, stirring spoon, or you can use an electric hand mixer (on medium speed) to blend everything together until it is well combined.
1 cup creamy peanut butter, 1/2 cup granulated white sugar, 1 large egg, 1 teaspoon vanilla extract
Scoop about 1.5 tablespoons of cookie dough (or use a medium cookie scoop) and roll it into a ball. Place the cookie balls onto the prepared baking sheet about 2-inches apart.
