Bang Bang Chicken Skewers with Easy Bang Bang Sauce

Easy Bang Bang Sauce
1cupmayonnaise
1/2cupsweet chili sauce
1tablespoonsriracha(less or more, or omit for no spice)
Instructions
**Soak the bamboo skewers in water for 30 minutes to prevent them from burning**
10 wooden bamboo skewers
Preheat your grill, or grill pan, to medium heat (about 375°F).
In a large mixing bowl, combine the chunks of chicken, olive oil, onion powder, garlic powder, salt, pepper, and chili powder until the chicken is well coated in the seasonings and oil.
3 boneless, skinless chicken breasts, 2 tablespoons olive oil, 1 teaspoon onion powder, 1 teaspoon garlic powder, 1 teaspoon kosher salt, ½ teaspoon black pepper, ½ teaspoon chili powder
Skewer 5-6 pieces of chicken onto each skewer.
In a separate small bowl, whisk together the mayonnaise, sweet chili sauce, and sriracha (if using) until combined. Reserve half of the bang bang sauce, in a separate bowl, for later.
1 cup mayonnaise, 1/2 cup sweet chili sauce, 1 tablespoon sriracha
Place your chicken skewers onto the grill and cook for about 5-6 minutes per side, until the chicken reaches an internal temperature of 155°F (so almost cooked).
Brush the bang bang sauce (1/2 cup that was not set aside) onto the chicken skewers and continue cooking for about 2 minutes, or until the chicken reaches an internal temperature of 165°F.
Serve the chicken skewers with the reserved bang bang sauce for a dipping sauce, and enjoy!
Notes
Metal skewers can be used instead of wooden bamboo skewers - no need to soak metal ones!
Add as little, as much, or none at all of the sriracha based on your preferred spice level. Adding the full amount will make the recipe spicy, however just a small drop of sriracha adds tons of flavor without too much heat. If you want the bang bang sauce sweeter, add some honey on with the other ingredients.
The sweet chili sauce has a very mildly spicy kick to it, especially when combined with the creamy and cool mayonnaise. If it's too spicy for you, or you want it sweeter, add some honey until your preferred spice/sweet level is reached.
Omitting the chili powder is another option for less spice. You could also use cayenne pepper instead of chili powder for even more spice!
When cutting the chicken breasts, aim for large bite-sized pieces of cubed chicken breasts, about 1-inch in size. You want larger chunks that won't fall apart on the grill, but not huge chunks that take forever to cook through.
Remember to only brush half of the bang bang sauce on the chicken skewers for the last minutes of cooking. The rest of the sauce needs to be set aside and used for serving - the skewers are really good dipped in the bang bang sauce when eating.
