Cake Batter Rice Krispie Treats (Viral Dot Cake Krispie Treats)

Cake Batter Rice Krispie Treats are a fun twist on the viral dot cakes that have taken over social media. Instead of cake and frosting, this version uses soft, gooey rice krispie treats that are loaded with mini marshmallows and cake batter extract - and covered in colorful funfetti sprinkles just like the viral trend.

Ingredients

  • 5 tablespoons salted butter
  • 1 bag (10 oz) mini marshmallows
  • 1 teaspoon vanilla extract
  • ½ teaspoon cake batter extract
  • 6 cups Rice Krispies cereal
  • 1/2 cup rainbow sprinkles
  • 1 container (3.15 oz) nonpareil sprinkles (the ball/dot shaped sprinkles)

Instructions

  • Prepare a 9x9-inch square pan by spraying it with nonstick cooking spray and then lining it with parchment paper for easy removal of the treats.
    *The parchment paper is optional but it makes it easier to lift the treats out and cut them evenly.
  • In a large pot, over medium low heat, melt the butter.
    5 tablespoons salted butter
  • Once the butter is completely melted, add the mini marshmallow and continue cooking, while stirring frequently, until they are completely melted and smooth.
    1 bag (10 oz) mini marshmallows
  • Remove the pot from the heat and stir in the vanilla extract and cake batter extract until mixed well.
    1 teaspoon vanilla extract, ½ teaspoon cake batter extract
  • Stir in the Rice Krispies cereal and rainbow sprinkles, gently mixing until all the cereal is evenly coated in the gooey marshmallow mixture.
    6 cups Rice Krispies cereal, 1/2 cup rainbow sprinkles
  • Dump the rice krispie treats into the prepared pan and lightly grease your hands with nonstick cooking spray, and gently press them into an even layer in the pan.
  • Immediately sprinkle the non-pareil sprinkles over top and gently press them into the krispie treats to form an even top layer.
    1 container (3.15 oz) nonpareil sprinkles
  • Allow the treats to cool and set at room temperature for 1 hour. Cut into squares and enjoy!

Notes

  • If using unsalted butter, add a pinch of salt when adding the butter to the pot.
  • Do not turn up the heat when melting the butter and marshmallows. Low and slow is the best way to melt the marshmallows, otherwise you run the risk of the marshmallows scorching and then they'll taste "burnt". It takes several minutes but leave the heat on low (medium low at the highest).
  • My #1 tip for making Rice Krispie treat bars is to use fresh Rice Krispie cereal. If the cereal is stale, old, or has sat in the pantry opened for awhile your treats won't be as soft, chewy, and gooey.
  • To perfectly replicate the 'dot cake' trend use the little ball shaped sprinkles (called non-pareils) on top of the treats.
  • You can also add a melted white chocolate glaze over top the bars before adding the dot sprinkles. Melt a white chocolate baking bar, white candy melts, vanilla almond bark, or white chocolate melting wafers according to the package directions and either spread it on top in an even layer, or drizzle it over the top of the bars, before pressing down the dot sprinkles.
  • The best sprinkles to use for the krispie treat bars (when you add them in with the cereal) are the regular shaped sprinkles, the stick shaped ones, and any color or pattern or shape will work. I don't recommend using the little dot/ball sprinkles inside the krispie treats because they will bleed color when mixed with the warm marshmallow mixture.
  • If you want marshmallow bits inside the treats, add 1 cup mini marshmallows in with the cereal and sprinkles.
  • When pressing the treats into the pan, it's so important to gently press them down. You do not want to pack and firmly press them down or else the treats could be hard once cooled.
