Chicken Broccoli Rice Casserole

This family favorite cheesy Chicken Broccoli Rice Casserole is a simple weeknight dinner idea that uses convenient store-bought ingredients and already cooked chicken. A creamy base with chunks of chicken, broccoli, and cheesy broccoli rice packets.

Ingredients

  • 2 packets (5.7 oz each) Knorr Cheddar Broccoli Rice
  • 2 cans (10 oz each) condensed cream of chicken soup
  • cups cooked chicken cubed or shredded
  • 1 can (14.5 oz) chicken broth
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon Italian seasoning
  • 1 bag (10.8) steamfresh frozen broccoli florets
  • 2 cups shredded cheddar cheese

Instructions

  • PREP : You need to first cook the steamfresh frozen broccoli according to package directions (usually around 5 minutes). Place the broccoli in the microwave to cook while you prepare the rest.

  • Preheat the oven to 350℉. Spray a 9x13 baking dish with cooking spray and set aside for later.
  • In a large mixing bowl add the rice packet contents, condensed cream of chicken soups, cooked chicken, chicken broth, garlic powder, onion powder, and Italian seasoning. Mix well to combine thoroughly.
    2 packets (5.7 oz each) Knorr Cheddar Broccoli Rice, 2 cans (10 oz each) condensed cream of chicken soup, 2½ cups cooked chicken, 1 can (14.5 oz) chicken broth, ½ teaspoon garlic powder, ½ teaspoon onion powder, ½ teaspoon Italian seasoning
  • Pour the mixture from the bowl into the prepared baking dish. Top the casserole with the steamed broccoli (cooked from the microwave), and then evenly sprinkle the shredded cheese over top of everything.

  • Bake for 25-30 minutes or until the edges are browned, casserole is bubbly, cheese is melted, and the rice is cooked through.

Notes

Knorr Rice Packets : The brand is Knorr and they come in packets and you want the one that is the 'cheddar broccoli' flavor. I have linked to them on Amazon above, but it is a 12 pack, and you can easily find them in the store. I just wanted to share a visual of what it looks like. Do not pre-cook the rice before adding it into the mixing bowl. Dump all the dry contents from the packet straight into the mixing bowl. 
Condensed Creamed Soup : I prefer using one can cream of chicken + one can cream of broccoli soup in this recipe. Don't confuse the cheddar broccoli soup for the condensed cream of broccoli soup. They're different! 
Cheddar Cheese : Use mild cheddar, medium cheddar, or sharp cheddar. It's most important that you shred it yourself from a block of cheese. It makes a big difference in taste and meltability (is that a word, haha). One small block (8 ounces) will yield 2 cups of shredded cheese.
