Cinnamon Streusel Baked Apples are tender baked apples filled with a cinnamon oatmeal cookie mix streusel. This delectable apple dessert is always a hit with it's savory and sweet warm flavor, fragrant smell, and delicious soft apple texture.

Ingredients

  • 4 large pink lady apples (Honeycrisp or Fuji work well too)
  • 1 bag (17.5 oz) oatmeal cookie mix
  • 1 cup whole old-fashioned oats
  • 1/2 cup finely chopped walnuts
  • 1 tablespoon ground cinnamon
  • 1 cup (2 sticks) salted butter softened
  • cups water

For Serving

  • vanilla bean ice cream
  • caramel sauce or syrup

Instructions

  • Prep : Preheat the oven to 375℉. Find a baking pan (like a cake pan with sides on it) that will fit all the halves of apple inside of it. There will be 8 halves/pieces of apple, a 9x13-inch or 10x15-inch pan will usually work well. Set the pan aside.
  • Prep Apples : Cut each apple in half, from the top of the core down, and remove the seeds and core from each half.
    Use a melon baller or apple corer to also remove some of the inside of each apple, so there is more room for the streusel to go.
    Place the apple halves, cut side up, into the baking pan.

  • In a large mixing bowl, stir together the oatmeal cookie mix, oats, walnuts, and cinnamon until combined.
    1 bag (17.5 oz) oatmeal cookie mix, 1 cup whole old-fashioned oats, 1/2 cup finely chopped walnuts, 1 tablespoon ground cinnamon
  • Add the softened butter and use your clean hands, a pastry cutter, or a hand mixer to combine until the mixture is crumbly.
    * This will take several minutes so I think it's easiest to use an electric hand mixer or a pastry cutter.

  • Stuff each apple with a generous amount of the streusel topping. The streusel should cover the entire top of the apple half.
  • Pour the water into the pan, avoiding the streusel topped apples, and then cover the pan with aluminum foil.

  • Bake for 30 minutes, remove the foil, and continue baking for 30-35 minutes or until the apples are soft when pierced with a fork or toothpick and the streusel topping is golden brown.
  • Remove the pan from the oven and serve the apples while warm with a scoop of vanilla ice cream and caramel sauce or syrup drizzled over top (optional).

Apple Tips : It's important to pick the right apples for this baked apple recipe. When choosing apples, look for larger varieties such as Pink Lady apples, Granny Smith Apples, Honeycrisp Apples, or Fuji Apples. These larger apples will hold their shape much better while baking and they are larger in size which helps them hold up better to the hot oven and the bake time. 
I also recommend opting for apples with a balanced combination of sweetness and tartness to compliment the sweet oatmeal cookie cinnamon streusel. Additionally, ensure that the apples are firm and free from bruises or blemishes for the best results in both texture and flavor of the apples. 
Pink Lady or Fuji apples are the best ones to use for this delicious apple dessert. They are sweet, but also tart, and they are firmer and larger in size, which make them perfect for this easy dessert.
