Ingredients

  • 3 cups cottage cheese (I recommend 2% milk fat or higher)
  • 1 cup buffalo sauce (see notes)
  • 2 tablespoons ranch seasoning mix
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 3 cups cooked shredded chicken
  • 1 cup shredded cheddar cheese

Instructions

  • Preheat the oven to 350℉. Set aside a 9x9-inch baking dish for later (no need to spray it with cooking spray).
  • Add the cottage cheese, buffalo sauce, ranch seasoning, garlic powder, and onion powder into a blender. Blend on high speed until the cottage cheese is smooth and creamy. Transfer the mixture into a large mixing bowl.
3 cups cottage cheese, 1 cup buffalo sauce, 2 tablespoons ranch seasoning mix, 2 teaspoons garlic powder, 1 teaspoon onion powder
  • Add the shredded chicken into the mixing bowl with the cottage cheese mixture, and stir until combined.
    3 cups cooked shredded chicken
  • Transfer the cottage cheese buffalo chicken mixture into the prepared pan. Top with the shredded cheddar cheese.
    1 cup shredded cheddar cheese
  • Bake for 15-20 minutes or until the dip is heated through and the cheese is melted.
  • Serve with vegetable sticks, tortilla chips, crackers, or your other favorite dipping options.

Notes

Buffalo Sauce : This dip is somewhat spicy because it's a buffalo recipe - buffalo is a spicier taste and heat level naturally. If you want extra spicy then use Franks Red Hot Buffalo Sauce and/or add some hot sauce. For a more mild dip make sure you are using a mild buffalo sauce from Sweet Baby Ray's brand (they specifically make a mild buffalo sauce) or Kinders brand. You can also use Hidden Valley Buffalo Ranch dressing, or use 1/2 cup mild buffalo sauce + 1/2 cup ranch dressing instead of all buffalo sauce.
Cottage Cheese : I recommend using either 2% or 4% milk fat cottage cheese. I don't recommend using a low-fat (1%) or fat-free cottage cheese because it has too much liquid and will add extra liquid to the dip once it's baked. If using lower fat cottage cheese, you will want to drain off the extra liquid from the dip before serving. It doesn't affect the final taste, but it doesn't necessarily look appetizing.
