Notes
Buffalo Sauce : This dip is somewhat spicy because it's a buffalo recipe - buffalo is a spicier taste and heat level naturally. If you want extra spicy then use Franks Red Hot Buffalo Sauce and/or add some hot sauce. For a more mild dip make sure you are using a mild buffalo sauce from Sweet Baby Ray's brand (they specifically make a mild buffalo sauce) or Kinders brand. You can also use Hidden Valley Buffalo Ranch dressing, or use 1/2 cup mild buffalo sauce + 1/2 cup ranch dressing instead of all buffalo sauce.Cottage Cheese : I recommend using either 2% or 4% milk fat cottage cheese. I don't recommend using a low-fat (1%) or fat-free cottage cheese because it has too much liquid and will add extra liquid to the dip once it's baked. If using lower fat cottage cheese, you will want to drain off the extra liquid from the dip before serving. It doesn't affect the final taste, but it doesn't necessarily look appetizing.
