Cracker Barrel Meatloaf

Ingredients

Meatloaf

  • pounds ground beef
  • 1 cup finely crushed saltine crackers
  • 1 small yellow onion finely diced
  • 1/2 cup finely chopped green pepper
  • 2 large eggs
  • 1/3 cup whole milk OR half and half
  • 1/4 cup ketchup
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • ½ teaspoon dried parsley
  • ½ teaspoon dried basil

Meatloaf Glaze

  • 1/4 cup packed light brown sugar
  • 1/4 cup ketchup
  • 2 tablespoons yellow mustard

Instructions

  • Preheat the oven to 350℉. Spray a 9x5-inch loaf pan with cooking spray. You can also line a baking sheet (12"x17") with parchment paper or tin foil (spray the foil lightly with cooking spray). 
  • In a large bowl, combine the ground beef, crushed saltine crackers, chopped onion, chopped green bell pepper, eggs, milk, ketchup, salt, black pepper, garlic powder, onion powder, thyme, parsley, and basil. Mix until all ingredients are thoroughly combined. 
    1½ pounds ground beef, 1 cup finely crushed saltine crackers, 1 small yellow onion, 1/2 cup finely chopped green pepper, 2 large eggs, 1/3 cup whole milk OR half and half, 1/4 cup ketchup, 1 teaspoon kosher salt, ½ teaspoon black pepper, ½ teaspoon garlic powder, ½ teaspoon onion powder, ½ teaspoon dried thyme, ½ teaspoon dried parsley, ½ teaspoon dried basil
  • Form the meatloaf mixture into the prepared loaf pan OR form the meatloaf into a loaf shape and place it on the baking sheet. 
  • In a separate smaller bowl, whisk together the brown sugar, ketchup, and mustard until combined well. Spoon & spread the glaze mixture evenly over top of the meatloaf. 
    1/4 cup packed light brown sugar, 1/4 cup ketchup, 2 tablespoons yellow mustard
  • Bake for 1 hour or until the internal temperature is 165℉
  • Remove the meatloaf from the oven and allow it to rest for 5-10 minutes before slicing.

Notes

Ground Beef : 80/20 ground beef is preferred but for a leaner option that still yields good results, you can use 85/15 ground beef. 
Crackers : Finely crush the saltine crackers and then measure out 1 cup of the crushed cracker crumbs. Ritz crackers can also be used instead of saltines if preferred. 
Don't Overmix The Meatloaf Mixture : I think it's best to use clean hands to go in and gently mix all the meatloaf ingredients together. You can also wear disposable gloves when doing this. Just mix everything until it's thoroughly combined and the ingredients are dispersed throughout.
