Ingredients
4cupschopped fresh broccoli florets
1can (10.5 oz)cream of chicken soup
1/2cupmayonnaise
1/2cupsour cream
1cupshredded cheddar cheese
1/4cupgrated parmesan cheese
2largeeggsbeaten
½teaspoongarlic powder
¼teaspoononion powder
¼teaspoonkosher salt
¼teaspoonblack pepper
1sleeveRitz crackers(crushed, about 1½ cups)
4tablespoonsbuttermelted
Instructions
Preheat the oven to 375 degrees F. Spray a 8x8 baking dish with cooking spray and set aside.
In a large pot of boiling water, cook the broccoli florets for 3 minutes until crisp-tender. Drain in a colander and rinse under cold water to stop the cooking process. Set aside.
In a large bowl, add the cream of chicken soup, mayonnaise, sour cream, cheddar cheese, parmesan cheese, beaten eggs, garlic powder, onion powder, salt, and pepper. Stir until well combined.
Add the broccoli into the creamy mixture and stir until it's evenly coated and combined.
Transfer the broccoli mixture into the prepared baking dish, spreading it out evenly.
In a separate bowl, combine the crushed Ritz crackers and melted butter. Mix well until the crackers are evenly moistened.
Sprinkle the buttery cracker crumbs evenly over the top of the broccoli casserole.
Bake for 30-35 minutes or until the casserole is hot and bubbly and the cracker topping is golden brown.
Remove from the oven and let it stand for 5-10 minutes before serving.
