Curry Chicken Salad

Creamy, flavorful, and a protein-packed salad - this Curry Chicken Salad is a delicious twist on the classic chicken salad recipe. Tender chicken, crunchy celery, and green bell pepper with a curry spiced creamy dressing. Serve it on croissants, sandwiches, wraps, lettuce cups, or use your favorite crackers and veggies sticks to dip.

Ingredients

  • 1 cup plain greek yogurt
  • 1/2 cup mayonnaise
  • 2 tablespoons yellow curry powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 4 cups cooked shredded chicken
  • 3 celery stalks finely diced
  • 1 green bell pepper finely diced
  • 1/4 cup finely diced sweet onion (about 1/2 a small onion)

Instructions

  • Whisk together the plain greek yogurt, mayonnaise, curry powder, salt, and pepper in a large mixing bowl until smooth.

  • Stir in the shredded chicken, celery, green bell pepper, and finely diced onion until everything is combined well and coated. 
    4 cups cooked shredded chicken, 3 celery stalks, 1 green bell pepper, 1/4 cup finely diced sweet onion
  • Cover and refrigerate for at least 3 hours before serving. Enjoy on croissants, sandwiches, lettuce wrap, on a bed of greens, or dip crackers or crunchy fresh veggies.

Notes

  • If you want to add or switch out ingredients - try these options that would complement the curry chicken salad really nicely. Crunchy cashews, sweet raisins like golden raisins are a perfect pairing with curry.  
  • I recommend using a plain greek yogurt that you LOVE. The flavor really shines through in this recipe. I love the Greek Gods brand because it's so smooth, creamy, and has a very mild taste to it. 
  • I don't recommend using all plain greek yogurt instead of the yogurt + mayonnaise combo. You need that little bit of mayonnaise to provide richness and creaminess to the dressing. 
  • You can use a sweet onion, thinly sliced green onions, or yellow onion for a more mild onion flavor. Or use a red onion or white onion for a more zesty bright onion flavor. 
  • I prefer using a yellow curry powder because it's savory and slightly sweet, which pairs well in this easy chicken salad recipe. There are other options of curry powder so make sure you are using your favorite; as some curry powder is much more intense or spicy in flavor. I recommend using the basic yellow curry powder you can find with the dried seasonings at the grocery store. 
  • Instead of a green bell pepper, other options are yellow bell pepper, orange, or red bell pepper all work great. 
  • Serving suggestions include inside croissants, on your favorite bread (toasted) for sandwiches, enjoyed on its own, as a wrap, or low carb options include dipped with crackers or veggies, over a bed of lettuce or inside crisp lettuce cups.
