Greek Chicken Meatballs are juicy, flavorful, packed with Mediterranean flair, and a lighter take on a classic comfort food favorite. Ground chicken is seasoned with fresh herbs, garlic, shallots, and a hint of lemon - they're tender on the inside with just the right amount of golden brown crisp on the outside.

Instructions
Preheat the oven to 400℉. Line two rimmed baking sheet(s) with parchment paper.
In a large mixing bowl, add the ground chicken, panko breadcrumbs, feta cheese, shallots, eggs, garlic cloves, dill, parsley, lemon juice, salt, pepper, and red pepper flakes (if using). Gently mix everything together until thoroughly combined.* Don't mix too aggressively, just gently mix and fold until combined well and everything is distributed evenly. It helps if you crumble the ground chicken into the bowl instead if just dropping the whole thing in there.
2 pounds ground chicken, 1 cup plain Panko breadcrumbs, 1/2 cup crumbled feta cheese, 2 shallots, 2 large eggs, 4 cloves garlic, 2 tablespoons chopped fresh dill, 2 tablespoons chopped fresh parsley, 1 tablespoon lemon juice, 1 teaspoon kosher salt, 1 teaspoon black pepper, ½ teaspoon red pepper flakes
Use a small cookie scoop, or 1 tablespoon, to form the meatball mixture into tablespoon-sized balls and place them onto the prepared pans.
Bake meatballs for 20-25 minutes, or until the internal temperature reaches 165℉.
Serve as is, in a rice bowl, meatball gyro, pita bread, and/or tzatziki sauce. Enjoy!
Notes
Ground Chicken : Ground turkey is an alternative option. For best taste, use a higher fat content ground chicken like 85/15 or 90/10. I would stay away from the very lean, almost no-fat ground chicken.
Panko Breadcrumbs : For a gluten-free choice, use GF panko breadcrumbs or ground pork rinds.
Feta Cheese Crumbles : They come in plain and flavored varieties. If you're using flavored feta, choose a Greek flavor to ensure your seasonings complement each other.
Shallots : Another option is to use very finely diced red onion.
Garlic Cloves : Fresh is best, but if you're using jarred chopped garlic then you will need 2 tablespoons, or you can also use the equivalent to 4 garlic cloves in garlic paste.
