Instructions
Prep : Lay paper towels on the counter top and place the 10 pickles onto them. Pat the pickles dry to remove any excess moisture from the pickles.
10 whole dill pickles
Add the cream cheese and ranch seasoning mix into a mixing bowl. Use an electric hand mixer to beat until it's creamy and combined well.
Assemble The Pickle Roll Ups- Lay a slice of ham onto a cutting board. - Spread a thin layer of the cream cheese mixture all over the ham slice (just one side). - Place a dill pickle at the edge of the ham slice.- Roll it up. - Use a sharpknife to cut the roll into bite-sized pieces. Place them onto a serving platter or plate. - Repeat with the remaining ham and pickles.

The pickle roll-ups can be served right away OR refrigerate them for up to 2 hours before serving. It's easier to cut the roll ups into clean slices when they're cold. If refrigerating, cover the plate with plastic wrap.
Notes
Dry Pickles : It's so important that the pickles are dry prior to rolling them in the cream cheese mixture and ham slices. If you just grab them right out of the jar, chances are is that they will be too wet to stick to the cream cheese. I recommend laying out a paper towel and laying the 10 pickles on it. Then use the excess paper towel to dab the pickles dry.
Clean Easy Slices : I recommend refrigerating the pickle roll-ups for 30 minutes prior to slicing for the best, easy, and clean slices. They can be sliced and served right away, but they're much better and easier to slice once they have had refrigeration time.
Softened Cream Cheese : Don't forget to put the cream cheese out on the countertop, at room temperature, for 1 hour prior to starting. You want the cream cheese softened to make it more spreadable.
Serving Tip : Serve the roll-ups on cocktail toothpicks or small skewer sticks for easy eating. The roll-ups can be served right away OR refrigerate them for 1-2 hours for a chilled appetizer.
