Ham Noodle Casserole

Ham Noodle Casserole is a quick and easy ham casserole with pasta that's perfect for busy weeknights that the whole family will love! This easy casserole is full of egg noodles, and a cheesy and creamy sour cream sauce.

Ingredients

  • 1 bag (16 oz) wide egg noodles
  • 1 pound ham (diced, 2 cups)
  • 2 cups frozen peas
  • 2 cups shredded cheddar cheese
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1/2 cup whole milk
  • 1/2 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper
  • 1/2 cup plain panko breadcrumbs

Instructions

  • Preheat the oven to 350℉. Spray a 9x13 casserole baking dish with nonstick cooking spray. Set aside. 
  • Cook the egg noodles, in a large pot of salted water, according to the package directions. Cook to al dente or softer depending on preference.

  • In a large mixing bowl, stir together the ham, peas, shredded cheddar cheese, cream of mushroom soup, whole milk, sour cream, garlic powder, onion powder, and black pepper until combined well. 
    1 pound ham, 2 cups frozen peas, 2 cups shredded cheddar cheese, 1 can (10.5 oz) condensed cream of mushroom soup, 1/2 cup whole milk, 1/2 cup sour cream, 1 teaspoon garlic powder, 1 teaspoon onion powder, ½ teaspoon black pepper
  • Fold the noodles into the ham mixture and stir until thoroughly combined. 
  • Transfer the mixture to the prepared casserole dish and spread it out evenly. Sprinkle the panko breadcrumbs over the top of the casserole. 
    1/2 cup plain panko breadcrumbs
  • Cook for 40-45 minutes or until the casserole is warmed through and the breadcrumbs are golden brown. 

Notes

Panko Breadcrumbs : This is optional and can easily be left off if wanted. The panko provides a crunchy, golden brown topping to the casserole. You can also use crushed Ritz crackers or Club crackers. 
Do I Cover While Baking? : You can cover the casserole with tin foil while baking if wanted. If it's uncovered, the egg noodles peeking out will get crispy (which my kids don't love), so I will usually cover the casserole with foil and then remove the foil for the last 15-20 minutes of the bake time.
Frozen Peas : My family prefers super soft veggies so I use completely thawed peas. But there are other options too; use canned peas that have been drained and rinsed, or cook a microwaveable bag of peas according to package directions and then use 2 cups of the cooked, softened peas. If you are using frozen peas from the freezer (which is fine) the peas will come out more crisp tender. 
Ham : Use up leftover diced ham, buy a package of diced ham (16 oz), get some fresh sliced deli ham and chop it up.
