Instructions
Preheat the oven to 425℉. Line a large baking sheet/cookie sheet with parchment paper.
Pretzel Bites
Divide the pizza dough ball into 4 equal pieces. Roll each piece into a long rope about 1-inch thick. Cut into 1 1/2-inch bite-sized pieces and place them on the parchment-lined baking sheet. Continue with the remaining dough pieces.
Let the pizza dough bites rest, at room temperature, on the baking sheet for 15 minutes.
In a large pot, bring the 8 cups of water to a boil over medium-high heat. Once boiling, slowly and carefully stir in the baking soda until dissolved.

Drop a few dough pieces into the boiling water and cook for 30 seconds. Use a slotted spoon to life them out and place them back onto the parchment paper on the baking sheet. Repeat with the remaining dough pieces.
Egg Wash
Whisk together the egg and water in a small bowl. Brush each dough piece lightly with some egg wash.

Bake & Topping
Bake for 13-17 minutes or until the pretzel bites turn golden brown.
Remove the pretzel bites from the oven and immediately brush pretzel bites with the melted butter and sprinkle kosher salt over top the butter.

Cool slightly, then serve the pizza dough pretzels bites warm with your favorite dipping sauce. Enjoy!

Allowing the cut dough bites to rest at room temperature for 15 minutes before boiling helps them puff slightly and relaxes the gluten for a smoother, rounder shake without becoming bready or over proofed.
Make sure you are using a large pot for the boiling water and baking soda! Slowly add the baking soda in, while stirring, because it will bubble up very quickly, and adding it too fast can cause the water to foam over the sides of the pot. Stir gently unfiltered fully dissolved before adding the dough bites.
Boiling the dough bites in a baking soda bath gives these bites their classic pretzel flavor and chewy crust. Don't skip this important step! You can't have pretzels without it.
Keep batches small when boiling the dough bites to maintain consistent water temperature and baking soda concentration.
These are best served warm soon after baking.
Try adding everything bagel seasoning or grated parmesan cheese (the cheap, shelf-stable stuff) over the dough bites before baking for a flavor twist.
Instead of sprinkling kosher salt over top the butter, try using cinnamon and sugar to create sweeter cinnamon sugar pretzel bites.
