Fresh strawberry pie is loaded with lots of fresh strawberries covered in an easy, homemade strawberry gelatin. No Jell-O mixes required! Serve with some freshly whipped cream and you have a lighter dessert that is perfect for summer!

Ingredients

  • 1 pie crust 9", cooked and cooled
  • 6 cups fresh strawberries halved
  • 1 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1/2 cup water
  • sweetened whipped cream for garnish

Instructions

  • Take 1 cup of the strawberries and mash them with a potato masher, or put them in a food processor to puree/chop small. Set aside.
  • In a small saucepan, over medium-high heat, combine the sugar, cornstarch, mashed 1 cup strawberries, and water. Stir with a whisk to combine.
  • Bring to a boil, stirring occasionally. Once boiling, let boil for 3 minutes while stirring constantly. It will be thick. Take off the heat and let cool for 30 minutes.
  • Put remaining strawberries into the pie crust and pour the strawberry gelatin over them. Let refrigerate for several hours (6 hours) or overnight so the pie can set. Serve with sweetened whipped cream or Cool Whip.

Notes

You can make your own pie crust or buy a frozen one. Just make sure that whatever you use, that it's cooked and cooled completely.
