Baked Bean Chili
Baked Bean Chili is an easy, 4 ingredient chili recipe that is sweet & spicy! Sweet baked beans, lean ground beef, tomato juice, and seasonings make this chili so quick and easy to make. Don't forget the corn chips, shredded cheese, and sour cream!
Servings 10 servings
- 2 lbs lean ground beef
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1 teaspoon onion powder
- 2 cans (28 oz each) original baked beans do not drain
- 4 cups tomato juice
- 1 packet chili seasoning
Brown ground beef in a large soup pot over medium-high heat until no longer pink. When meat is halfway cooked, add the garlic powder, cumin, and onion powder. Crumble meat as it cooks. Drain grease.
Add the cans of baked beans, tomato juice, and chili seasoning packet. Stir together and bring to a boil. Reduce heat to low and let simmer, uncovered, for 20-30 minutes.
Serve with Fritos corn chips, shredded cheese, and sour cream.
What cheese do I use? I use Colby Jack cheese but you can also use cheddar cheese or Pepper Jack cheese for some spice.
Is tomato juice the same thing as V8? No it's not. Tomato juice can be found in the juice aisle and it will say 'tomato juice' on the front. I have never used V8 juice in this recipe so I can't say how it will change the flavor. Tomato juice is easy to find and common so I would suggest using it instead of trying to substitute with something else like V8.
